1/4 cup Olive oil
2 tbsp Lemon juice
2 cloves Garlic ((minced))
1/4 tsp Sea salt
1/4 tsp Black pepper
1/2 cup Parmesan cheese ((shaved or shredded))
1 medium Avocado ((cubed))
1/3 cup Pine nuts ((preferably toasted))

Steps:

  • Place the chopped kale into a large bowl. Set aside.
  • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, sea salt, and black pepper, until a dressing forms. (Alternatively, place dressing ingredients into an airtight container and shake vigorously.)
  • Pour the dressing over the kale leaves and toss to coat. Use your hands to massage the dressing into the leaves for a minute or two (pick up a bunch, squeeze, and repeat). Do this until the kale softens and begins to wilt. (It will happen fast with baby kale, and takes a little longer with regular kale.)

1 lemon, juiced
2 ripe avocados, mashed
1 pint grape tomatoes, quartered
1 bunch green onions, sliced
2 tablespoons olive oil
6 cloves garlic, diced

½ teaspoon cayenne pepper

Steps:

1/2 teaspoon salt, plus
1/8 teaspoon salt
4 small tomatoes, cut in 3/4-inch pieces (2 1/2 cups)
2 medium ripe avocados, cut into 3/4-inch dice (1 1/2 cups)
3 scallions, thinly sliced (white and green parts)
1 large garlic clove, minced
1 tablespoon extra virgin olive oil
1/4 teaspoon ground cumin
1 head boston lettuce, torn into large pieces (8 cups)
1 medium cucumber, peeled, quartered lengthwise, seeded and thinly sliced diagonally (1 cup)
2 tablespoons coarsely chopped fresh cilantro

Steps:
