3 large bundles collard greens, well-washed
4 slices bacon, chopped

1/2 cup light brown sugar
3 tablespoons apple cider vinegar
4 cups chicken broth

1 large sweet onion, diced
1 (12 oz.) bottle ale beer
1/2 cup firmly packed brown sugar
1/2 cup bourbon
1 t. dried crushed red pepper
6 lbs. fresh collard greens, trimmed and chopped
1/2 cup apple cider vinegar
1 t. salt
1/2 t. pepper

Steps:

  • Cut bacon crosswise into 1/4 inch strips. Melt butter in a large Dutch oven over medium heat; add bacon, and cook, stirring often, 8 minutes or until crisp. Drain bacon on paper towels, reserving drippings in skillet. Saute onion in hot drippings until tender. Stir in bacon, ale, and next 3 ingredients; cook 3 minutes or until mixture is reduced by 1/4th. Add collards in batches, and cook, stirring occasionally, 5 minutes or until wilted. 10 ounces pork belly, cut into chunks
1 large onion, diced
4 bunches collards, stems removed, leaves chopped
8 cups chicken stock
1 cup granulated sugar
1/2 cup red chile flakes
1/2 cup apple cider vinegar
1/4 cup hot sauce
1 tablespoon garlic powder
1 tablespoon onion powder
1 cup diced pork belly
2 cups bourbon
2 sticks (1 cup) unsalted butter
1 cup brown sugar
Two 15-ounce cans black-eyed peas, drained and rinsed
8 strips cooked bacon, crumbled
1 red bell pepper, diced
1 tablespoon all-purpose flour
2 tablespoons unsalted butter
2 tablespoons olive oil
