BACON-CHEESEBURGER MEATLOAF

Bacon-Cheeseburger Meatloaf image

Bacon-wrapped meatloaf is a wonderful thing and it's only more wonderful when the beefy meatloaf is amped up with cheddar cheese. Try slices on buns with iceberg lettuce and Russian Dressing.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Beef Recipes     Ground Beef Recipes

Yield 1 meatloaf

Number Of Ingredients 12

2 slices day old white bread, torn into small pieces or 1/2 cup plain breadcrumbs, preferably homemade
2 yellow onions, finely chopped (11/2 cups)
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
3 tablespoons Worcestershire sauce
1/4 cup low-sodium chicken broth
3/4 cup ketchup
1 tablespoon brown sugar
2 pounds coarsely ground chuck, preferably 85 percent lean
1 large egg, lightly beaten
1 1/2 cups grated cheddar
8 slices (6 ounces) bacon

Steps:

  • Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.P
  • Cook the Onions: Pulse onion in food processor until finely chopped (or do so by hand). Heat 2 tablespoons olive oil in a large skillet over medium-high. Add onion and 1 teaspoon kosher salt to skillet; cook, stirring occasionally, until onion is softened, about 8 minutes. Stir in Worcestershire sauce, broth, and 1/4 cup ketchup. Remove from heat; let cool completely.
  • Prep the Meat and Glaze: In a small bowl, stir together 1/2 cup ketchup and brown sugar for glaze; set aside. In a large bowl, combine onions with ground chuck, 1 egg, 1/2 cup reserved breadcrumbs, 2 teaspoons salt, and 1/2 teaspoon freshly ground pepper. Mix with your hands until well combined. Gently fold in cheddar.
  • Bake and Let Cool: On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with 1/2 of glaze, then top with bacon, overlapping slices slightly. Brush remaining glaze over bacon. Bake until top is caramelized and a thermometer inserted into thickest part registers 165 degrees, 55 to 65 minutes. (If top is browning too quickly, tent with foil.) Let cool at least 25 minutes.

BACON DOUBLE CHEESEBURGER STUFFED MEATLOAF RECIPE - (3.9/5)

Bacon Double Cheeseburger Stuffed Meatloaf Recipe - (3.9/5) image

Provided by Booper-2

Number Of Ingredients 10

1 pound 93% lean beef

6 tablespoons ketchup, divided
1 tablespoon Montreal Steak Seasoning
1 tablespoon Worcestershire sauce
1 large egg
1 tablespoon brown sugar
8 ounces mild cheddar cheese, shredded

Steps:

  • Preheat oven to 350°F. In a large bowl combine beef, bread crumbs and milk. Pouring milk directly over bread crumbs. Add 2 tablespoons ketchup, Worcestershire and steak seasoning. Set aside. Combine well with hands, do not overwork the meat mixture. Gently press meatloaf into bowl and divide in half. Place first half into 7x10" baking dish and form into a flat meatloaf Gently press the center in to create a rim around the outside of the meatloaf. Add shredded cheese into the center of the meatloaf. Form remaining half of meatloaf in the bowl into a size similar than the meatloaf in the pan. Set on top and press the sides together to seal in the cheese. Form into a loaf shape about 1½ to 2 inches tall. You may notice cracks in the loaf. Run your hands under warm water and then across the meatloaf to smooth the cracks out. Set meatloaf aside. In a small bowl combine 4 tablespoons ketchup and 1 tablespoon brown sugar. Mix well with a fork. Apply glaze evenly all over your meatloaf (except the bottom). Arrange bacon slices over the top of the meatloaf. Start by wrapping a piece of bacon across the front side and a second piece of bacon across the back side. Arrange remaining bacon over the top. BACON AND DOUBLE CHEESEBURGER MEATLOAF

Bacon and Double Cheeseburger Meatloaf image

WOW!! I found this on another website, made it, and it was WONDERFUL. I just had to share it. I have doubled the ingredients as you will want left overs. I know everyone one says the same thing, but this IS the Best meatloaf I have ever had.. I served it with Steak Fries, and green beans. You have got to try this one!!!!! I did change the prep a little from the original......

Provided by Marsha 2

Categories     Meat

Time 1h20m

Yield 6-8 serving(s)

Number Of Ingredients 12

8 slices of thick bacon
3 lbs ground chuck
2 cups fresh breadcrumbs
6 slices of a sharp cheddar cheese (sandwich size slices)
1 cup chopped onion
4 tablespoons mayonnaise
4 tablespoons sweet pickle relish
4 teaspoons dry mustard
1 1/2 teaspoons salt
1 teaspoon pepper
2 eggs
1/2 cup ketchup or 1/2 cup chili sauce

Steps:

  • Heat oven to 350 degrees. In a medium pan, cook bacon just until limp. Remove from pan and set aside. Remove most of the grease and saute the onions just until soft, cool, and set aside.
  • In a small bowl, mix the eggs, mayo, pickles, onions, dry mustard, salt, & pepper, just to combine. Place meat and bread crumbs in a large bowl, and mix in the egg mixture. Mix well. With your hand, score the meat into 3 equal sections, just eyeball it if you want. Take one section of the meat mixture and shape it into an oval about 1 inch thick. This is the bottom layer of the meat loaf. Place 3 slices of the cheese on top of this loaf making sure that they are not hanging over the edge of the meat loaf. You don't want it to melt and run out. Take the next 1/3 section of meat, place it on top of the cheese layer and mold it to the same size as the bottom layer. Lay the last 3 slices of cheese on this layer contuning to keep the cheese away from the edges. Place the rest of the mixture on the top and shape to the rest of the meat loaf. Smooth the sides of the loaf with a little water on your fingers so that you can't see that it was done in layers, and to make sure the cheese won't ooze out when it melts. It may seem like alot of fuss, but it is WELL worth the little extra effort. Spread the ketcup or chili sauce over the top, then place the bacon strips across the meatloaf sideways instead of the length, covering the entire loaf. Bake for 1 hour, or until it reaches an internal temp of 160. Remove from oven and tent with foil for about 10 minutes to set. When you slice this, you will be able to see the 2 cheese layers. This sets up nicely and will be great for leftover sandwiches -- .

Yield Makes 6 servings

Number Of Ingredients 12

4 slices bacon
1 1/2 pounds lean ground chuck or ground round
1 cup firm fresh white bread crumbs
1 cup coarsely shredded sharp Cheddar cheese (4 ounces)
1 large sweet onion, such as Vidalia, chopped
2 tablespoons mayonnaise
2 tablespoons India or other sweet pickle relish
2 teaspoons dry mustard
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
1 egg
1/4 cup ketchup

Steps:

  • Preheat the oven to 350°F. In a medium skillet, cook the bacon over medium heat until limp and some of the fat is rendered, 3 to 4 minutes. Remove the bacon from the skillet and reserve it.
  • In a large mixing bowl, use your hands to gently but thoroughly mix together the meat, bread crumbs, 1/2 cup of the cheese, onion, mayonnaise, relish, mustard, salt, pepper, and egg. Pat the mixture into a shallow 2-quart baking pan. Spread the top of the loaf with ketchup, then lay the bacon strips over the ketchup. Bake until the loaf is firm and the bacon is crisp, 45 to 50 minutes, sprinkling the top the loaf with the remaining 1/2 cheese to melt during the last 5 to 10 minutes of baking. Let the meatloaf stand in the baking dish for 10 minutes, then cut into squares to serve.

Tips:

  • Use a combination of ground beef and ground pork: This will give the meatloaf a more flavorful and juicy texture.
  • Season the meatloaf well: Be generous with the salt, pepper, and garlic powder. You can also add other spices, such as onion powder, paprika, or chili powder.
  • Wrap the meatloaf in bacon: This will help to keep it moist and flavorful during baking.
  • Use a good quality cheese: The cheese is one of the key ingredients in this meatloaf, so make sure to use a cheese that you love. Cheddar, mozzarella, and Swiss are all good choices.
  • Let the meatloaf rest before slicing: This will help to keep the juices in the meatloaf and prevent it from falling apart.

Conclusion:

This bacon and double cheeseburger meatloaf is a delicious and easy-to-make meal that is perfect for a weeknight dinner. It is sure to be a hit with your family and friends. Serve it with your favorite sides, such as mashed potatoes, green beans, or a salad.
