- Cook bacon in a large nonstick skillet over medium-high heat until fat begins to render, about 2 minutes. Add 3 tablespoons oil, potatoes, onion, chard stems, and rosemary; season with salt. Cook until potatoes are tender and browned in places, 13 to 15 minutes. Stir in chard leaves and garlic, season with pepper, and cook, stirring a few times, until leaves are tender, about 3 minutes. Transfer to a serving dish; loosely cover to keep warm.
- Add remaining 1 tablespoon oil to skillet and place over medium heat. When oil shimmers, add eggs, season with salt, and cook, stirring frequently, until just set, about 1 minute. Serve with potato mixture and salsa.

I was wanting to do something different with Au Gratin potatoes, and this is what came out of the dark regions of my brain ;).Cook time doesn't include the cooking of the bacon. And don't let the long list of instructions scare you, it's alot easier than it looks :). Steps:
- In a small saucepan melt margarine,then add onion and cook until soft,at this time add flour.
- Stir in the milk a little at a time until slightly thickened.
- Add 1 cup of cheese,bacon,mustard, and cayenne pepper.
- Stir until cheese is melted, if mixture seems to be too thick add a bit more milk to thin it out some.
- In a lightly greased or sprayed 1 1/2 quart baking dish layer half of the potatoes, then sprinkle with half of the salt, pepper, and garlic powder.
- Pour half of the cheese sauce over the potatoes and repeat with remaining ingredients, finishing with the cheese sauce.
- Cover and bake for 45 minutes at 375 degrees remove cover, top with remaining 1/2 cup of swiss cheese and bake for another 15 to 20 minutes or until top is golden brown.
- Let " rest " for 10 minutes, serve and ENJOY !

- Preheat oven to 400 degrees.
- Butter a large casserole dish.
- Place potatoes in even layers in casserole dish. Sprinkle with salt, pepper and garlic powder as you layer.
- In a medium sauce pan, melt butter on medium heat. Add flour and whisk. Cook for about 1 minute. Add milk and bacon and stir until slightly thickened. Poor over potatoes and top with Swiss cheese. Cover and bake for 1 1/2 hours. Uncover and broil, if desired. Let sit for a few minutes and then dig in!
- Tip: keep your potatoes in a bowl of water until you are ready to use to prevent browning. And you don't have to peel your potatoes -- more vitamins that way. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish.
- Place potatoes and cauliflower into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender but firm, about 20 minutes. Drain and transfer potatoes and cauliflower to the prepared casserole dish.
- Heat olive oil in a skillet over medium heat; cook and stir onion in the hot oil until transparent, 5 to 10 minutes. Transfer cooked onion to the potato mixture.
