BACON AND TOMATO QUESADILLAS
It's like a Mexican version of a BLT! You choose whether you want it smoky or zesty by the flavor of petite diced tomatoes you use. Crispy bacon and fresh basil add a new variation to the classic quesadilla. A perfect party finger food or quick snack.

Steps:
- Layer on half of each tortilla: 1/4 cup cheese, 2 tablespoons diced tomatoes. 1 tablespoon bacon and 1 tablespoon basil. Fold each tortilla in half to form a half circle.
- Lightly coat a large nonstick skillet or griddle with oil. Cook each quesadilla, over medium-high heat for 1 1/2 minutes on each side until cheese is melted and tortilla is lightly browned.
- Cut the quesadilla into 4 wedges and serve with sour cream.

- Cut bacon into small pieces, then cook over low flame in skillet.
- Meanwhile, dice up the cooked potato and, after some fat is rendered from the bacon, add to the skillet. Cook until the potatos are crusty brown. season with salt and pepper.

This is an easy midweek supper dish that can be made from start to finish in only 30 minutes. Bacon is quick to cook and packed with flavour. It is easier to cut up bacon using scissors instead of a knife.

Steps:
- Heat the oil in a large frying pan and cook the potatoes over a low heat for 10-15 minutes, turning occasionally.
- Add the garlic and bacon and increase the heat. Fry for 5-6 minutes, tossing occasionally, until the potatoes and bacon are golden.
- Add the onions and cook for 1 minute.
- Stir in the mustard and plenty of salt and pepper. Divide between four plates and keep warm.
- Half fill a small frying pan with water and bring to a simmer. Carefully break in the eggs and allow the water to come back to the boil. Simmer for 1 minute, then remove each egg using a slotted spoon.
- Top each plate of hash with a poached egg, sprinkle with black pepper and serve immediately.

Steps:
- Preheat oven 375 degrees F (190 degrees C).
- Place bacon in a large skillet over medium heat. Fry bacon until crisp. Drain on paper towels.
- Crumble bacon into a medium-size mixing bowl. Mix in bell pepper, tomatoes, and basil. In a separate small bowl, combine mayonnaise and garlic.
- Roll pizza crust into a 12x15 inch rectangular baking sheet. Spread the mayonnaise mixture evenly over the crust. Sprinkle the bacon mixture over the mayonnaise, and top the entire pizza with cheese.
- Bake 18 to 20 minutes or until the top is bubbly and the crust is golden brown. Cool and cut the pizza into 24 squares.
