1 medium head cauliflower (2 pounds), cut into florets
2 cups half-and-half cream, divided
1/2 cup shredded Asiago cheese
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/8 teaspoon pepper
1/2 to 1 cup water
4 bacon strips, cooked and crumbled

Steps:

  • Place cauliflower in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 8-10 minutes or until tender. Cool slightly., Place cauliflower and 1/2 cup cream in a food processor; cover and process until pureed. Transfer to a large saucepan., Stir in the cheese, salt, nutmeg, pepper and remaining cream. Add enough water to reach desired consistency; heat through. Sprinkle each serving with bacon.

10 slices bacon
2 medium onions, chopped (2 3/4 cups)
2 heads cauliflower, separated into florets
5 cups chicken broth
2 (10 3/4 ounce) cans condensed cream of celery soup, undiluted
8 ounces brie cheese, cut into small pieces
parsley (to garnish)
red pepper (to garnish)

Steps:

  • Fry bacon in a large pot until browned but not crisp.
  • Drain on paper towels, then coarsely chop.
  • Remove all but 2 tablespoons of drippings from the pot.
  • Add onions and saute until translucent, about 7 minutes.
  • Stir in cauliflower, broth, and celery soup.
  • Bring to a boil, reduce heat, and cover and simmer for 45 minutes or until cauliflower is soft.
  • Cool soup 10 minutes before adding bacon and cheese.
  • When cool enough to handle, puree in batches in a blender until smooth, pouring pureed soup into another pot or storage container.
  • Garnish with parsley and or red pepper.

1 large head cauliflower, broken into florets
2 cans (14-1/2 ounces each) chicken broth
1/2 cup heavy whipping cream
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/8 teaspoon pepper
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and coarsely chopped
1/3 cup shredded Asiago cheese or Parmesan cheese
6 pieces bacon strips, cooked and crumbled

Steps:

  • In a large saucepan, combine cauliflower and broth; bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until cauliflower is tender. , Cool slightly. 2 tablespoons extra-virgin olive oil, plus more for drizzling
Kosher salt, freshly ground pepper
4 slices thick-cut bacon (about 4 ounces)
1 small fennel bulb, chopped
1 small onion, chopped
1 garlic clove, finely chopped
1/3 cup dry white wine or water
6 cups low-sodium chicken broth
3/4 cup heavy cream
2 bay leaves

Steps:

  • Preheat oven to 350°F. Toast hazelnuts on a rimmed baking sheet, tossing occasionally, until golden brown, 10-12 minutes. Let cool, then coarsely chop.
  • While the nuts are cooling, increase oven to 400°F. Toss cauliflower and 2 Tbsp. oil on another baking sheet; season with salt and pepper. Roast, tossing once, until florets are browned all over and tender, 30-35 minutes.
  • Meanwhile, cut bacon crosswise into 1/2" pieces. Heat a heavy pot over medium and cook bacon, stirring occasionally, until browned and crisp, 10-12 minutes. Transfer to paper towels.
  • Cook fennel, onion, and garlic in drippings in pot, stirring occasionally, until onion and fennel are very soft, 8-10 minutes. Add wine and cook until mostly evaporated, about 5 minutes. Add roasted cauliflower, broth, cream, and bay leaves; season with salt and pepper. Bring to a boil, reduce heat, and simmer until cauliflower is very tender, 20-25 minutes. Pluck out bay leaves; discard. Let mixture cool slightly.

1 chicken bouillon cube
1 ham bouillon cube (bacon is better, if you can find it)

1 carton (32 oz) Progresso™ reduced-sodium chicken broth (4 cups)
1/2 teaspoon herbes de Provence
4 slices bacon, chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 tablespoon butter

Steps:

  • In large saucepan or Dutch oven, heat oil over medium heat. Add leeks, garlic and shallot. Cook 5 minutes, stirring occasionally, until leeks and shallot are softened but not browned. Add cauliflower, broth and herbes de Provence. Cover; cook until cauliflower is tender, about 20 minutes.
