6 bacon strips, diced
1/2 cup chopped onion
1 package (8 ounces) Velveeta, cubed
1 tube (16.3 ounces) large refrigerated buttermilk biscuits
1/2 cup ketchup
1/4 cup yellow mustard

Steps:

  • Preheat oven to 400°. In a large skillet, cook beef, bacon and onion over medium heat until meat is no longer pink; drain. Add cheese; cook and stir until melted. Remove from heat., Flatten biscuits into 5-in. circles; top each with 1/3 cup beef mixture. Fold sides and ends over filling and roll up. Place seam side down on a greased baking sheet., Bake until golden brown, 18-20 minutes. In a small bowl, combine ketchup and mustard; serve with roll-ups.

1 pound ground beef
1 onion, chopped
1 cup chopped dill pickles or sweet pickles
1 cup shredded Cheddar cheese
1 tablespoon prepared yellow mustard, or to taste
1 (16 ounce) package egg roll wrappers
1 cup vegetable oil for frying

Steps:

  • Place the ground beef and onion in a skillet over medium heat, and cook and stir for about 10 minutes, breaking up the beef into crumbles as it cooks. Drain the meat and transfer to a bowl. Stir in the chopped pickles, shredded cheese, and mustard, and mix together well.
  • Line a baking sheet with parchment paper. Place a bowl of water next to your work surface. Remove an egg roll wrapper from the stack, and cover the remaining wrappers with a damp paper towel to prevent them from drying out.
  • Place the wrapper on the work surface with a corner facing towards you. Place about 1/4 cup of filling on the wrapper, and fold the top corner down over the filling. Tightly roll the wrapper into a cylinder, tucking in the corners as you roll, until the wrapper completely encloses the filling. Moisten the last corner with a little water, and finish wrapping so the moistened corner tightly seals to the egg roll, and there are no gaps to let the filling leak out. Place filled egg rolls on the parchment-lined baking sheet, covered with a slightly damp paper towel, while you finish making the egg rolls.
  • Heat the oil in a deep saucepan or deep fryer until a thermometer registers 365 degrees F (185 degrees C). Carefully place 2 or 3 egg rolls at a time into the hot oil, and fry for about 4 or 5 minutes, turning the egg rolls over once, until golden brown. Remove the egg rolls with a tongs, and drain on paper towels.

1 1/2 lbs lean ground beef
8 -10 slices bacon, cut into small pieces
2 cups monterey jack and cheddar cheese blend, shredded
2 (8 ounce) packages egg roll wraps
1 egg
1 -2 cup cooking oil

Steps:

  • Cook bacon pieces in frying pan. Spoon onto paper towel-covered plate to drain grease.
  • Cook ground beef in same fry pan until browned, drain grease. Add bacon bits to ground beef and mix well.
  • Beat egg in bowl. (Egg is used to seal edges of egg roll wrappers; water works too).
  • Take egg roll wrapper (package will tell you how to fold them up.) and put large spoonful of hamburger and bacon on one corner of wrapper. Add pinch of cheddar and Monterey jack cheese on top of meat mixture.
  • Coat edges of egg roll with egg or water. Roll up wrapper and repeat until you have used all the meat or all the wrappers, whichever happens first.

1 pound ground chuck
salt and ground black pepper to taste
8 slices bacon
1 tablespoon olive oil
1 medium onion, sliced
4 large eggs
4 slices American cheese
4 tablespoons mayonnaise
4 hamburger buns, split and toasted

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Shape beef into 4 equal patties and season with salt and pepper on both sides.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, 10 to 12 minutes. Drain bacon slices on paper towels.

1 lb ground beef
6 slices bacon, chopped
1 cup diced sweet onion (about 1 medium onion)
1/2 cup diced red bell pepper
4 garlic cloves, minced
1/2 teaspoon dried oregano, crushed between palms

2 green onions, thin-sliced with green tops included
1/2 cup ketchup
salt and black pepper
2 sheets puff pastry, thawed
2 cups shredded cheddar cheese (we love the extra sharp)
1 egg white, lightly beaten with a fork

Steps:

  • Preheat oven to 400°F Line a jellyroll pan with parchment paper.
  • Place ground beef, bacon, and sweet onion in a large, deep skillet and saute until bacon has rendered its fat and onions are translucent. Break up chunks of ground beef as you are saute-ing,

  • Use the bottom piece of the plastic wrap to help you roll the puff pastry and filling lengthwise into a log. Use the egg white as glue to seal the roll. Gently press both ends closed. Using the plastic wrap, lift the roll onto the prepared jellyroll pan and place seam-side down. Repeat process with the remaining sheet of puff pastry.
  • Brush the tops of the bacon cheeseburger puff rolls with egg white and bake for 20 to 25 minutes until golden brown. Let rest for 10 minutes, then slice each roll on the diagonal into 4 pieces to serve.
