1/2 cup shredded Monterey jack
4 slices cooked bacon, chopped
1 pound ground chuck
Kosher salt and freshly ground black pepper
4 large hamburger buns, split
Ketchup, mayonnaise, and mustard, for serving
Lettuce, sliced tomato, onion, and avocado, for serving

Steps:

  • Combine the jack cheese and chopped bacon in a bowl. Put the beef in another bowl and season with salt and pepper; use a rubber spatula to mix it in. Flatten 1/4 of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; put it in the center of the ground beef. Bring up the sides of the patty over the filling, making sure the cheese is completely covered by the meat. Flatten slightly for a nice patty shape. Set them side by side on a platter in the refrigerator while preparing the grill.
  • Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Brush the grates with oil to keep the burgers from sticking. Grill the burgers for 8 minutes per side for medium. (The USDA recommends cooking ground beef until it is no longer pink and the internal temperature is 160 degrees F.) Remove the burgers to a clean side plate while you toast the buns.

1/4 cup mayonnaise
2 tablespoons ketchup
2 tablespoons yellow mustard
2 tablespoons pickle relish
1 tablespoon apple cider vinegar
8 slices thick-cut bacon
4 sesame seed hamburger buns, split
2 pounds ground beef (80-percent lean)
Kosher salt
4 thin slices sharp white Cheddar
4 thin slices red onion
8 thin slices tomato
1/4 head iceberg lettuce, shredded

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine the mayonnaise, ketchup, mustard, relish and vinegar in a small bowl; set aside.
  • Working in batches if necessary, add the bacon to a large cast-iron skillet over medium heat. Cook, flipping halfway through, until crisp and golden, about 10 minutes. Transfer the bacon to a nonstick baking sheet. Discard the bacon fat (or save for another use) and wipe the skillet clean but do not wash. Heat over medium-high heat until very hot, about 5 minutes.
  • Add the buns split-side up to the baking sheet with the bacon and bake until the buns are toasted, about 5 minutes.
  • Loosely form the beef into 4 balls. Add one ball of beef to the skillet and press firmly to flatten with a large flat metal spatula for 10 seconds, then gently remove the spatula. Sprinkle the patty generously with salt; repeat with the remaining beef balls, cooking in batches if necessary. Let cook, undisturbed, until well browned on the bottoms, 2 to 3 minutes. Flip the patties, sprinkle with more salt and top each with a slice of Cheddar. Continue cooking until the cheese is melted around the edges and the bottoms are browned, about 2 more minutes.

4 Idaho potatoes, washed
Cheese sauce:
2 tsp butter
2 tsp flour
1/4 tsp salt
1/8 tsp black pepper
1/2 cup milk
10 slices American cheese, chopped
Filling:
1/2 lb ground beef
1/4 cup onion, finely diced
1/8 tsp salt
1/8 tsp black pepper
1 tsp Worcestershire sauce
2 Tbsp yellow mustard
4 Tbsp ketchup
2 Tbsp dill relish

Steps:

  • To prepare the baked potatoes, preheat the oven to 350°F. Place the potatoes in an 8" x 8" baking pan. Cover the pan with foil and bake until soft, about 1 hour. When the potatoes have finished baking, let them cool until you're able to handle them comfortably. While the potatoes are cooling, make the cheese sauce and the filling. To prepare the cheese sauce, melt the butter in a small sauce pot. Add the flour and cook, while stirring, for 30 seconds. Add the salt, pepper, and milk. Bring the mixture to a simmer, stirring constantly. When the sauce has thickened, remove from the heat and add the cheese. Stir until the cheese is completely melted. To prepare the filling, brown the ground beef with the onion in a small sauté pan over medium heat. Drain off the extra fat and place the meat into a medium-size bowl. Add the salt, black pepper, Worcestershire sauce, mustard, ketchup, dill relish, and cheese sauce to the bowl and set aside. Once the potatoes have cooled, cut an opening, lengthwise, from the top of the potato. Scoop out the flesh, creating a shell. Take 1/2 cup of the potato flesh and chop it into small pieces and set aside. Repeat with the remaining potatoes. Place the empty potato shells back into the baking pan. To assemble the baked potatoes, fold in the reserved potato flesh with the ground beef mixture. Fill the prepared potato shells with the mixture and bake for 45 minutes.

4 cups shredded cheddar cheese, divided
2 pounds ground beef
1 cup chopped onion
1 can (14-1/2 ounces) diced tomatoes with garlic and onion, drained

1 tablespoon Worcestershire sauce
3/4 teaspoon salt

1 cup butter, cubed

1/3 cup hot milk
