BACON CORNBREAD WITH CHEDDAR AND SCALLIONS

Bacon Cornbread With Cheddar and Scallions image

This cornbread hits all the notes, but skews particularly salty and savory, thanks to sautéed scallions, extra-sharp Cheddar, and bacon, folded into the batter and crowning the top of the cornbread. You can use fancy, thick-cut bacon or flimsier thin-cut varieties. Each has its benefits: Thinner bacon slices form a light, crunchy layer on the crust, while thick-cut slices have more presence in the cornbread. This cornbread belongs at brunch, where it pairs well with eggs cooked in any style, sautéed vegetables and even breakfast sausages, but it would also be at home next to a bowl of chili. If preparing for a crowd, you can bake this off a day in advance and reheat it in the oven just before serving.

Time 2h

Yield 6 to 8 servings

Number Of Ingredients 12

12 slices thick-cut bacon (about 1 pound)
1/4 cup plus 1 teaspoon extra-virgin olive oil
2 cups chopped scallions (from about 4 bunches)
Kosher salt
Butter, for greasing the pan
1 cup medium-grind stone-ground cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1 cup whole milk
1 egg, beaten
1 tablespoon honey
8 ounces extra-sharp Cheddar, grated (about 2 cups)

Steps:

  • Heat oven to 400 degrees. Line a large baking sheet with aluminum foil. Place a wire cooling rack on top of the baking sheet and arrange the bacon on the rack. Bake until the bacon is crisp, 20 to 25 minutes. Remove from oven and let cool. Set 5 bacon strips aside, then chop remaining bacon into small pieces.
  • Meanwhile, heat 1 teaspoon olive oil in a medium skillet over medium. Add the chopped scallions, sprinkle with a small pinch of salt and cook, stirring occasionally, until the scallions are browned in spots, about 5 minutes. Set aside.
  • Grease a round 8-inch springform pan or cake pan with butter. In a large bowl, whisk together the cornmeal, flour, baking powder and 1/2 teaspoon kosher salt. Add the milk, egg, honey and 1/4 cup olive oil and whisk until smooth. Stir in the chopped bacon, scallions and cheddar cheese. Pour the batter into the prepared pan; use a spoon to spread the batter into an even layer.
  • Arrange the remaining bacon strips on top of the batter, trimming them as necessary, then bake until the cornbread is browned and firm in the center, 40 to 45 minutes. Let cool in the pan for 5 minutes, then run a kitchen knife around the edges of the pan to loosen. Cut into pieces and serve warm.

BACON AND SCALLION CORN MUFFINS

Bacon and Scallion Corn Muffins image

Provided by Giada De Laurentiis

Categories     side-dish

Time 50m

Yield 12 muffins

Number Of Ingredients 12

1 teaspoon hot sauce
8 ounces (about 8 slices) applewood-smoked bacon, cut into 1/3-inch pieces
1 1/3 cups buttermilk, at room temperature
2 large eggs, at room temperature
1 1/3 cups yellow cornmeal (about 7 ounces)
1 1/3 cups all-purpose flour (6 to 6 1/2 ounces)
1/3 cup sugar
1 tablespoon baking powder
3/4 teaspoon fine salt
1/4 teaspoon freshly ground black pepper
1 1/2 sticks chilled unsalted butter, cut into 1/2-inch cubes
5 large scallions (green onions), chopped

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a standard 12-cup muffin pan with paper liners.
  • In a large nonstick skillet, cook the bacon, over medium heat until crisp and brown. Transfer the bacon to paper towels; drain and cool.
  • In a large bowl, whisk together the buttermilk, hot sauce and eggs. Combine the cornmeal, flour, sugar, baking powder, salt and pepper in a food processor. Drop in the cold butter cubes. Using on/off turns, blend until the butter is cut in finely and the mixture resembles a coarse meal. Pour the dry ingredients over the buttermilk mixture. Scatter the bacon and green onions over the batter. Using a thin, flexible spatula, fold the batter together, scraping up the liquids from the bottom each time and turning the bowl as you fold. Do not over-fold; some dry patches are fine. Using a rounded 1/3 cup of batter for each muffin, fill the paper liners.
  • Bake until puffed and browning at edges, and a tester inserted into the center comes out clean, 18 to 20 minutes. Let the muffins stand 5 to 10 minutes. Twist each muffin in place to loosen the edges from the pan. Lift the muffins out onto a rack and cool.

SUNNY'S CHEESY BACON CORNBREAD DRESSING

Sunny's Cheesy Bacon Cornbread Dressing image

Provided by Sunny Anderson

Categories     side-dish

Time 1h55m

Yield 10 to 12 servings

Number Of Ingredients 17

5 to 6 cups gently crumbled cornbread
1 cup shredded Cheddar Jack cheese
1 cup shredded mozzarella (get the kind with cream cheese in it for extra credit)
1/2 cup loosely packed chopped fresh parsley
2 chopped scallions, white and green parts
Kosher salt and freshly ground black pepper
8 strips bacon
10 leaves fresh sage, finely chopped
1 stalk celery, finely chopped, leaves included if present
1/2 cup chopped red onion
3 cloves garlic, grated on a rasp
1 stick (8 tablespoons) unsalted butter, melted
1 cup buttermilk
1 cup chicken stock
1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
Nonstick cooking spray (butter flavor for extra credit), for the baking dish

Steps:

  • For the cornbread: In a large bowl, add the cornbread and toss with the Cheddar Jack, mozzarella, parsley and scallions. Season with salt and pepper.
  • For the dressing: In a large pan, add the bacon and cook until crisp. Remove, leaving the fat behind, and chop. Add the chopped bacon to the bowl of cornbread. Add the sage, celery, onions and garlic to the pan and saute until everything is tender, 8 to 10 minutes. Add everything, including the fat from the pan, to the cornbread and toss.
  • For the liquid: In a separate large bowl or liquid measuring cup, whisk together the melted butter, buttermilk, stock and Worcestershire sauce. Season with a pinch of salt and a few grinds of pepper. Slowly mix into the cornbread until the mixture is moist enough to spread but not wet enough to drip--you may not use all the liquid. Taste and season again with salt and pepper if needed.
  • Preheat the oven to 350 degrees F. Coat the bottom and sides of a 9-by-13-inch baking dish with cooking spray.
  • Add the dressing to the prepared baking dish, gently pressing down to even the top. Cover with aluminum foil and bake for 45 minutes. Uncover, raise the oven temperature to 400 degrees F, and bake until the top is golden brown, 10 to 15 minutes more. Serve warm.

BACON, CHEDDAR, AND SCALLION BREADS

Bacon, Cheddar, and Scallion Breads image

Categories     Bread     Mustard     Onion     Bake     Cheddar     Bacon     Winter     Caraway     Gourmet

Yield Makes 4 small loaves

Number Of Ingredients 14

3 cups all-purpose flour
2 teaspoons double-acting baking powder
1 teaspoon baking soda
2 tablespoons sugar
1 cup finely chopped scallion
1 teaspoon freshly ground black pepper
1 1/4 teaspoons salt
1 1/2 teaspoons caraway seeds
1 pound lean bacon, cooked, drained, reserving 2 tablespoons of the fat, and crumbled
2 large eggs
1 1/2 cups milk
3 tablespoons Dijon-style mustard
3 tablespoons vegetable shortening, melted and cooled
2 cups coarsely grated extra-sharp Cheddar (about 1/2 pound)

Steps:

  • Into a bowl sift together the flour, the baking powder, the baking soda, and the sugar. In a skillet cook the scallion with the pepper, the salt, and the caraway seeds in reserved bacon fat over moderately low heat, stirring, until it is soft and let the mixture cool. In a large bowl whisk together the eggs, the milk, the mustard, the shortening, and the scallion mixture, add the flour mixture, and stir the batter until it is just combined. Stir in the Cheddar, divide the batter among 4 buttered and floured loaf pans, each 5 3/4 by 3 1/4 by 2 inches, and bake the breads in the middle of a preheated 350°F. oven for 35 to 40 minutes, or until a tester comes out clean. Remove the breads from the pans and let them cool, right sides up, on a rack. The breads keep, wrapped well in plastic wrap and foil, chilled for 1 week or frozen for 1 month.

Tips:

  • Use fresh ingredients: Fresh corn kernels, scallions, and cheddar cheese will give your cornbread the best flavor. If you can, use organic ingredients for the best quality.
  • Don't overmix the batter: Overmixing the batter will make your cornbread tough. Mix just until the ingredients are combined.
  • Bake the cornbread in a hot oven: This will help the cornbread rise and create a crispy crust.
  • Let the cornbread cool slightly before serving: This will help the cornbread hold its shape when you slice it.

Conclusion:

Bacon cornbread with cheddar and scallions is a delicious and easy-to-make side dish that is perfect for any occasion. It is moist, flavorful, and has a crispy crust. This recipe is also very versatile. You can add other ingredients, such as diced jalapenos or crumbled sausage, to create your own unique cornbread. So next time you are looking for a side dish that will impress your guests, try this bacon cornbread with cheddar and scallions. You won't be disappointed!
