2 medium avocados, pitted, peeled and cubed
Juice of 1 medium lime
1/2 teaspoon salt
1/2 teaspoon ground cumin
Dash ground red pepper (cayenne)
1/2 cup finely chopped onion (1 medium)
1 plum (Roma) tomato, diced
1/8 cup chopped fresh cilantro
1 clove garlic, finely chopped
1/2 lb bacon, diced into 1/2-inch pieces
1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 tortillas)
1 1/2 cups shredded Cheddar cheese (6 oz)
2 to 3 teaspoons vegetable oil

Steps:

  • In medium bowl, roughly mash avocado with fork. Add remaining guacamole ingredients and mix together; set aside.
  • In 8-inch skillet, cook bacon over medium heat until crisp; drain on paper towels.
  • Place 4 tortillas on work surface. Divide guacamole evenly among the 4 tortillas, spreading to within 1/2 inch of edges. Divide bacon evenly among the 4 tortillas. Divide cheese among the 4 tortillas. Top each with another tortilla.
  • In 10-inch skillet, heat 1 teaspoon of the oil over medium heat. Carefully transfer 1 of the quesadillas to skillet. Cook until browned, then turn over to brown second side.
  • Repeat with remaining quesadillas, adding more oil to skillet as needed.
  • Cut each quesadilla into wedges before serving.

2 ripe avocados
1 tablespoon fresh lime juice, plus lime wedges for serving
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
1/2 small red onion, finely chopped (about 1/4 cup)
2 to 4 tablespoons drained jarred pickled jalapeno slices, chopped, plus 2 teaspoons brine
1 plum tomato, seeded and chopped
Tortilla chips, for serving

Steps:

  • Place the bacon in a large skillet and set over medium heat. Cook, turning, until crispy, 8 to 10 minutes. Transfer to a paper-towel-lined-plate to drain.

1 small tomato, diced
2 scallions, finely chopped
1 tablespoon fresh lime juice
1 to 2 tablespoons chopped cilantro leaves
1 jalapeno, seeded and minced
1 small garlic clove, minced
Salt, to taste
4 strips turkey bacon (about 3 ounces)
6 scallions,(white and green parts) thinly sliced
1 jalapeno, seeded and minced
1 garlic clove, minced
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
3 (8-inch) multi-grain tortillas
3/4 cup shredded reduced-fat Monterey jack cheese
1/4 cup reduced-fat sour cream, optional

Steps:

  • Guacamole: Coarsely mash the avocado in a large bowl. Add the tomato, scallions, lime juice, cilantro, jalapeno, and garlic until blended. Cover and chill until ready to serve.

2 ounces cream cheese, softened
2 flour tortillas
2 green onions, sliced
1 tablespoon Sour cream
¼ teaspoon Salsa

Steps:

  • In non-stick omelet pan, melt 1 tablespoon butter over medium heat.
  • Add peppers and cook for 2-3 minutes, tossing frequently. Add Canadian Bacon and cook for another 1-2 minutes, tossing frequently. Remove to paper-towel lined plate.
  • In medium mixing bowl, whisk together eggs and milk, beating until frothy.
