I always seem to have leftover cooked chicken. This simple, tasty salad is a great use of your leftover chicken, either white meat, dark meat, or a combination! Romaine lettuce, cooked chicken, avocado, and cherry tomatoes combine with ranch dressing, and everything is topped off with crunchy bacon. Use purchased ranch salad dressing, or stir up one of the buttermilk dressing recipes on the site. Enjoy for a hearty lunch with some crackers, or for dinner, with a crusty bread. This recipe is proportioned for one person, but it's easy to double or triple for your needs.

Tips for Making Bacon Spinach Breakfast Casserole Cups:

- For optimal results, employ high-quality ingredients. Farm-fresh eggs and crispy bacon elevate the dish's overall flavor. - Properly preheat your oven to ensure even cooking. An accurately heated oven yields consistent results. - When cooking the bacon, avoid overcrowding the pan. Doing so may result in uneven cooking and less crispy bacon. - If desired, substitute chopped ham, sausage, or cooked chicken for the bacon. This versatility allows you to cater to personal preferences or dietary requirements. - Feel free to add your favorite vegetables to the mix. Diced bell peppers, mushrooms, or tomatoes can enhance the flavor and nutritional value of the dish. - Experiment with various cheeses to discover your ideal combination. Shredded cheddar, mozzarella, or a blend of both are popular choices. - To save time, use pre-cooked bacon or frozen spinach. This shortcut simplifies the preparation process without sacrificing taste. - For a vegetarian version, omit the bacon and add extra vegetables or tofu. This adaptation caters to those with dietary restrictions or preferences.
