1 cup fresh whole milk ricotta

1 to 3 tablespoons heavy cream

1 stick (8 tablespoons) unsalted butter, plus more for the waffle iron
1 1/4 cups all-purpose flour
3/4 cup finely ground cornmeal
3 tablespoons sugar
1 teaspoon baking powder
1 teaspoon fine sea salt
3/4 teaspoon baking soda
4 large eggs, separated
2 cups buttermilk
2 teaspoons pure vanilla extract

Steps:

  • For the bacon: Preheat the oven to 400 degrees F.

  • Put the egg whites in a medium bowl and beat until soft peaks form.
  • Add the yolk mixture to the dry mixture, along with the butter, then whisk until the batter just comes together. Fold in the egg whites.
  • Heat a waffle iron and brush the grates with butter. Spoon about 1/2 cup batter into each waffle well and cook until golden brown, about 7 minutes. Keep warm on a rack set on top of a baking sheet in the oven while you cook the remaining waffles and the eggs.
  • For the eggs: Add 2 tablespoons butter to a nonstick pan over medium-high heat and let melt. Carefully crack 3 eggs into the pan and cook until set on the bottom, 1 to 2 minutes. Carefully flip the eggs with a spatula so that you don't break the yolks. Cook until just set, an additional 30 seconds to 1 minute. Remove from the pan and set aside. Repeat the process using the remaining butter and eggs. Sprinkle with salt and pepper.

1 cup milk
½ cup white sugar
¼ cup brown sugar
1 teaspoon vanilla extract
4 egg yolks
1 tablespoon brown sugar
1 tablespoon maple syrup
3 slices thick-cut bacon
1 ½ teaspoons maple syrup
1 teaspoon sea salt

Steps:

  • Place butter in a pot over medium heat; cook and stir until mostly melted, 1 to 2 minutes. Add flax meal and cinnamon; cook and stir until butter becomes a deep toasty brown, about 3 to 5 minutes. Pour browned butter into a large heat-resistent bowl.
  • Mix half-and-half, milk, white sugar, brown sugar, and vanilla extract together in a pot over medium-high heat. As the mixture approaches a boil, scoop out 1/4 cup and whisk it with egg yolks in a bowl. Repeat this 3 or 4 times until egg mixture is almost doubled in volume. Stir egg mixture into milk mixture; simmer until custard begins to thicken, about 2 minutes.
  • Pour custard through a strainer into the bowl with browned butter; stir until butter is incorporated. Cover bowl and refrigerate until completely cooled, 6 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and place a wire rack on top.
  • Mix brown sugar and 1 tablespoon maple syrup together in a small bowl.
  • Place bacon on the wire rack on the baking sheet.
  • Bake in the preheated oven for 10 minutes. Flip bacon and cook until about 2/3 cooked, 5 to 10 minutes more. Flip bacon again and baste the tops with brown sugar-syrup mixture; bake for 5 minutes. Flip bacon and baste the other side; bake for 5 minutes. Continue this process until bacon is crisp and coating has candied and all the brown sugar-syrup mixture is used, 5 to 10 minutes more.
  • Turn off oven and sprinkle sea salt over both sides of bacon; let sit for a few minutes in the oven. Chop bacon into bite-size pieces.
  • Preheat oven to 200 degrees F (95 degrees C). Cover a baking sheet with parchment paper. Drizzle 1 1/2 teaspoons maple syrup over the parchment paper, keeping the drops dime-size or smaller.
  • Bake in the preheated oven until drops are bubbling and height of each drop is less than half of it was in the beginning, about 1 hour. Cool on baking sheet until stiff yet slightly sticky.
  • Stir chilled custard and pour into ice cream maker; start churning. Start adding bacon bits, a few at a time, to churning custard about halfway through. Once the custard is getting thicker, add the syrup drops, 1 or 2 at a time to ensure they are evenly dispersed. Continue churning until custard is thick. Transfer to a freezer-safe container and freeze until it sets, 2 to 4 hours.

2 cups Original Bisquick™ mix
1 1/3 cups milk
1 egg
2 tablespoons vegetable oil
6 slices bacon, crisply cooked, chopped
1 cup sliced fresh strawberries
1/4 cup chocolate-flavor syrup

Steps:

  • Heat waffle maker; grease with shortening or vegetable oil (or spray with cooking spray before heating). In large bowl, stir together Bisquick mix, milk, egg, oil and bacon until blended. Pour 3/4 cup batter onto center of hot waffle maker. Close lid of waffle maker.
  • Bake about 5 minutes or until steaming stops. Carefully remove waffle. Repeat with remaining batter.
  • Serve waffles with strawberries and chocolate syrup.

1-1/2 cups all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking powder
1/4 teaspoon onion salt
1/4 teaspoon celery salt
3 large eggs, separated
1-3/4 cups whole milk
1/4 cup vegetable oil
1 tablespoon minced fresh parsley
1 tablespoon minced chives
1 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese
6 bacon strips, cooked and crumbled
Thinly sliced tomato

Steps:

  • In a bowl, combine the first five ingredients. In another bowl, combine the egg yolks, milk, oil, parsley, chives and Worcestershire sauce; stir into dry ingredients just until combined. Stir in cheese and bacon. Beat the egg whites until stiff peaks form; fold into batter. Preheat waffle iron. Fill and bake according to manufacturer's directions. Top with tomato slices.

8 oz Applewood smoked thick-cut bacon, coarsely chopped
1 1/2 cup white whole wheat flour or all purpose flour
1/4 cup packed dark brown sugar
2 tsp baking powder
1/8 tsp salt
3 eggs, separated, room temperature
1 cup whole milk, room temperature
6 tblsp unsalted butter, melted

Steps:

  • Cook bacon in medium skillet over medium heat 8-10 minutes or until browned and almost crisp, stirring occasionally; drain on paper towels. Reserve 2 tablespoons of bacon drippings from skillet. (reserve remaining drippings to brush over waffle iron, if desired.) Heat oven to 250. Place wire rack on large rimmed baking sheet. Whisk flour, brown sugar, baking powder and salt in large bowl. Heat waffle iron until hot. Meanwhile, whisk egg yolks in medium bowl until smooth. Whisk in milk, butter and reserve 2 tablespoons bacon drippings until blended. (Butter can be used instead of drippings in the batter.) Make a well in center of flour mixture. Pour in egg yolk mixture; whisk until almost smooth. Beat egg whites in small bowl at medium-high speed until stiff peaks form. Stir one-third of the egg whites into waffle batter to lighten; gently fold in remaining egg whites. Fold in bacon. Lightly brush waffle iron with some of the remaining reserved bacon drippings. (Canola oil can be used instead of drippings.) Pour ½ - 2/3 cup batter per waffle onto waffle iron (exact amount depends on size of waffle iron). Cook 2 ½ - 4 minutes or until crisp and golden brown, or cook waffles according to manufacturer's directions for iron. Arrange waffles on rack on baking sheet; place in oven to keep warm. Repeat with remaining batter.
