¼ cup salt
8 cups water

12 slices bacon
1 (16 ounce) bottle Italian-style salad dressing
toothpicks

Tips:

  • Selecting the Best Duck Breast: Choose a duck breast that is firm to the touch, with no signs of bruising or discoloration. The skin should be smooth and intact, with a thin layer of fat.
  • Preparing the Duck Breast: To ensure even cooking, score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat. This will help the fat render and the seasonings penetrate.
  • Choosing the Right Bacon: Select a good quality bacon that is thick-cut and has a nice smoky flavor. This will add a delicious crispy layer to the wrapped duck breast.
  • Wrapping Technique: When wrapping the bacon around the duck breast, make sure it is evenly distributed and slightly overlapping. This will help keep the duck breast moist and prevent the bacon from drying out.
  • Cooking the Duck Breast: To achieve a perfectly cooked duck breast, start by searing it in a hot skillet until the skin is golden brown and crispy. Then, reduce the heat and continue cooking until the duck breast reaches an internal temperature of 135°F (57°C) for medium-rare or 145°F (63°C) for medium.
  • Making the Cranberry Duck Sausage: For a flavorful and juicy sausage, use a combination of ground duck meat, pork, and cranberries. Season it with a blend of spices like sage, thyme, and fennel seeds to enhance the flavor.
  • Assembling the Dish: To create a visually appealing and delicious dish, place the cooked duck breast on a bed of roasted vegetables. Top it with the cranberry duck sausage and drizzle it with a sweet and tangy cranberry sauce. Garnish with fresh herbs like rosemary or thyme for an extra touch of flavor.

Conclusion:

This tantalizing combination of bacon-wrapped duck breast and homemade cranberry duck sausage is sure to impress your taste buds and leave you craving for more. The crispy bacon and tender, juicy duck pair perfectly with the sweet and tangy cranberry flavors.
