Bacon-Wrapped Filets with Scotched Mushrooms image

I got the idea for bacon-wrapped filet mignon when I saw some on sale in the grocery store. The rest was inspired by my husband, because he once made a Scotch and ginger ale sauce. This elegant recipe is for two, but it can easily be doubled. -Mary Kay LaBrie, Clermont, Florida

Nutrition Facts : ServingSize 1 Serving

Tips:

  • Choose high-quality ingredients: Use thick-cut bacon, fresh mushrooms, and tenderloin steaks for the best results.
  • Prep your mushrooms: Clean the mushrooms and remove the stems. You can use a small spoon to scoop out the inside of the mushrooms to create more space for the stuffing.
  • Cook the mushrooms properly: Sauté the mushrooms in butter until they are soft and golden brown. Season them with salt, pepper, and garlic powder for extra flavor.
  • Wrap the filets evenly: Wrap each filet with a single slice of bacon, making sure that the bacon is evenly distributed around the filet. Secure the bacon with a toothpick or skewer.
  • Cook the filets to your desired doneness: Cook the bacon-wrapped filets over medium heat until they reach your desired level of doneness. Use a meat thermometer to ensure that the internal temperature of the filets is correct.
  • Let the filets rest before serving: Allow the bacon-wrapped filets to rest for a few minutes before serving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful dish.
