1 tablespoon chopped fresh parsley
1/4 cup olive oil
1 lb fresh asparagus
1/2 lb raw bacon

Steps:

  • Saute garlic and parsley over low heat, then set aside to steep.
  • Remove ends from asparagus that are tough.

6 slices thick bacon
2 tablespoons olive oil
2 tablespoons parmesan cheese
1/2 tablespoon lemon juice
1 bunch asparagus (approximately 24-30 stalks)
3 minced garlic cloves
freshly ground salt and pepper, to taste

Steps:

  • On a baking sheet covered in foil, put 6 slices of bacon. Put sheet in cold oven, then turn on preheat to 400. Allow bacon to slowly cook for about 10-12 minutes. It should still be rather rare but partially cooked. Take it out and put it aside. Important: KEEP THE FOIL, do not throw it away - see below.
  • Meanwhile, put the other ingredients including asparagus into a gallon size ziplock bag and shake to coat thoroughly.
  • Wrap 4-5 stalks of asparagus about halfway down with the bacon. Place seamside down on the same foil and sheet you cooked the bacon on (right on the bacon grease spots). Cook for 10-20 minutes at 400 degrees, depending on how tender you want your asparagus (I like super tender at 20 minutes).

Extra-virgin olive oil

1 pound hickory smoked bacon (do not use thick cut)

Steps:

  • Preheat your grill to medium-high direct heat.
  • Trim the asparagus of the woody ends. Place on a sheet tray and drizzle with olive oil. Season with freshly ground black pepper and salt.
  • Wrap bacon slices around each asparagus spear. Skewer both ends of asparagus on each side to secure the bacon. Add 3 to 4 asparagus to each skewer.

2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt

1/2 teaspoon onion powder
Pinch freshly grated nutmeg
1 cup whole milk
1/2 cup grated Gruyere

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Divide the asparagus spears into 8 bundles. Wrap each bundle in the middle of the spears with one piece of bacon. Place the bundles seam-side down on the prepared baking sheet.
