20 strips bacon (about 12 ounces)
20 medium-large shrimp, shelled and deveined (about 1 pound)
1/2 cup barbecue sauce
1/4 cup canola oil
3 tablespoons lemon juice
1 teaspoon dijon mustard
3 tablespoons chopped chipotles in adobo sauce
1/2 teaspoon red pepper flakes
1/4 teaspoon cayenne pepper
Freshly ground pepper

Steps:

  • Soak 5 to 8 bamboo skewers in water for about 20 minutes to keep them from burning on the grill or under the broiler.
  • Meanwhile, cook the bacon in a large skillet until halfway done, about 4 minutes. Drain and cool on paper towels. Wrap a piece of bacon around the middle of each shrimp; skewer with bamboo through the point where the bacon ends meet to keep it from unraveling. Thread 3 to 5 shrimp on each bamboo skewer.
  • Puree the barbecue sauce, oil, lemon juice, mustard, chipotles, red pepper flakes, cayenne pepper and 1/4 teaspoon freshly ground pepper in a blender. Set aside half of the sauce for dipping.

16 large shrimp, peeled and deveined
8 slices bacon
barbeque seasoning, to taste

Steps:

  • Wrap shrimp with 1/2 slice of bacon, securing with a toothpick. Be sure and use the large shrimp--the cooking time for the shrimp and the bacon is similar. If you use medium-sized shrimp, you might want to precook the bacon a little--over cooked shrimp are tough and rubbery--and a real shame.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Line a jelly roll pan with extra heavy duty foil, and place baking rack in the pan. Place the shrimp on the rack, and sprinkle heavily with the barbecue seasoning. Turn and sprinkle second side. Set aside for 15 minutes. The bacon will turn from creamy white to a little opaque, and the seasonings will soak in.

6 large prawns, per person you're serving,shelled and deveined
6 pieces of raw bacon, 5-6 inches per slice,one for each shrimp
1 -2 cup spicy barbecue sauce
cayenne (optional) or prepared horseradish, to taste (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Wrap a slice of bacon around each large prawn.
  • Secure bacon by skewering each shrimp and bacon slice through with a toothpick.
  • Place in baking dish or on baking tray.
  • Add cayenne or horseradish (or both) to taste to the BBQ sauce (you can substitute Tabasco, if you like - the point is for the sauce to have a little kick), then brush each shrimp/bacon with BBQ sauce. (Or you can dip each one in the sauce before putting it on the tray.)
