BACON WRAPPED SAUSAGE MEATLOAF

Bacon Wrapped Sausage Meatloaf image

A different way of using sausages and a recipe from the Good Food Magazine from 2000, we love it and I made this many times. Serve sliced with some mustard, chutney or roasted onion gravy on the side. Any left overs are good on sandwiches. You can put it together up to a day ahead, leaf in the fridge until you are ready to cook it. It can be cooked without the tin, on a baking sheet and can easily be doubled. Adjust the seasoning to the type of sausagemeat you bought.

Tips:

  • Choose high-quality sausage and bacon: The better the quality of the ingredients, the better the final product will be. Look for sausage that is made with fresh, ground pork and bacon that is thick-cut and has a good amount of fat.
  • Use a variety of sausages: Don't be afraid to experiment with different types of sausage. Some popular options include Italian sausage, breakfast sausage, and chorizo.
  • Cook the sausage thoroughly: Make sure that the sausage is cooked all the way through before wrapping it in bacon. This will help to prevent the sausage from becoming dry and tough.
  • Don't overcook the bacon: Bacon should be cooked until it is crispy but not burnt. Overcooked bacon will be tough and chewy.
