30 uncooked shrimp (31-40 per pound), peeled and deveined
6 tablespoons creamy Caesar salad dressing, divided
15 bacon strips, halved crosswise
2 jalapeno peppers, seeded and thinly sliced

Steps:

  • Preheat broiler. In a large bowl, toss shrimp with 4 tablespoons dressing; let stand 15 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; keep warm., Remove shrimp from marinade; discard marinade. Top each shrimp with a jalapeno slice and wrap with a bacon strip; secure with a toothpick. Place on a greased rack of a broiler pan., Broil 4 in. from heat 2-3 minutes on each side or until shrimp turn pink, basting frequently with remaining dressing after turning., Discard toothpicks before serving.

I found this recipe on another site when I was looking to use up some leftover smoked gouda. It's very flavorful, easy enough for weekenights yet perfect for a dinner party too.

4 boneless chicken breasts
4 slices bacon
3 -4 ounces smoked gouda cheese
1/4 teaspoon cayenne
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon pepper

Steps:

  • Combine, cayenne, garlic powder, paprika and pepper.
  • Flatten chicken breasts to approx 1/4" thickness.
  • Season both sides of chicken with the cayenne mixture.
  • Place small piece (s) of cheese on chicken and roll up, pressing firmly.
  • Wrap each stuffed breast with a bacon slice and then brown over medium heat until bacon just begins to crisp.
  • Bake in a 350 oven for 20 minutes.

1 tube (8 ounces) refrigerated crescent rolls
1 small apple, peeled and cut into 24 thin slices
6 thin slices Gouda cheese, quartered
24 miniature smoked sausages
Honey mustard salad dressing, optional

Steps:

  • Preheat oven to 375°. Unroll crescent dough and separate into 8 triangles; cut each lengthwise into 3 thin triangles. On the wide end of each triangle, place 1 slice apple, 1 folded piece cheese and 1 sausage; roll up tightly., Place 1 in. apart on parchment-lined baking sheets, point side down. Non stick cooking spray
18 extra large shrimp, peeled & deveined
2 small apples, such as Gala or Jonathan
2 oz. smoked gouda cheese, shaved or shredded
9 slices apple wood bacon, halved
*(9 toothpicks, halved)
Apple Butter Sauce
1 cup apple butter
¼ cup sour cream
2 tablespoons balsamic vinegar

Steps:

  • Preheat a grill to medium temperature and spray with non stick cooking spray. Butterfly the shrimps, careful not to separate the two halves. Peel apples and slice them thinly to get 18 slices. To assemble the shrimp, fold a apple slice and some of the gouda cheese between each shrimp. Wrap the shrimp from one end to the other with a piece of bacon; secure with a pick. Grill the shrimp 4-5 minutes per side until bacon is crispy and shrimp is cooked through. Meanwhile whisk together the apple butter, sour cream and balsamic vinegar; spoon into a serving dish. To serve, remove picks from the shrimp and place on a platter with the sauce. Makes 18 or 6 appetizer servings.

2 whole garlic bulbs
1 tablespoon olive oil
15 small red potatoes, halved
15 bacon strips
2 cups shredded smoked Gouda cheese
1 teaspoon coarsely ground pepper
2 cups creme fraiche or sour cream
1/4 cup fresh cilantro leaves

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off of garlic bulbs. Brush with oil. Wrap each bulb in heavy-duty foil. Bake at 425° until softened, 30-35 minutes. Cool for 10-15 minutes. , Meanwhile, place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer just until tender, 8-10 minutes. Cut bacon strips in half widthwise. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; keep warm., Preheat oven to 375°.
