BACONIZED CORN

Baconized Corn image

LOVE this - from the Mennonite Community Cookbook. My mother made a skillet version of this a lot when I was a kid. She used fresh corn from our garden. Of course, fresh corn cut off the cob makes this recipe even more yummy! A great summer recipe.

1 tsp salt
1/4 tsp black pepper
1 1/2 tsp sugar
1 cup finely diced bacon

Tips:

  • Prepare the corn properly: Husk the corn and remove the silks. Then, rinse the corn under cold water to remove any dirt or debris.
  • Use high-quality bacon: Thick-cut bacon will provide the best flavor and texture. Look for bacon that is smoked and cured, not just salted.
  • Cook the bacon until crispy: Cook the bacon in a skillet over medium heat until it is crispy and browned. This will take about 10-12 minutes.
  • Wrap the corn in bacon tightly: Wrap each ear of corn with a strip of bacon, making sure to overlap the bacon slightly. Secure the bacon with toothpicks or skewers.
  • Bake the corn until the bacon is cooked through: Bake the corn in a preheated oven at 400°F for 20-25 minutes, or until the bacon is cooked through and the corn is tender.
  • Let the corn cool slightly before serving: Let the corn cool for a few minutes before serving to allow the bacon to set. This will also make the corn easier to handle.
