1 tablespoon cornstarch
2/3 cup chili sauce
1/3 cup raisins
1 tablespoon brown sugar
1/8 teaspoon cinnamon
4 pork chops or 4 boneless skinless chicken breasts
1 tablespoon vegetable oil
salt and pepper

Steps:

  • In medium bowl, blend reserved pineapple juice with cornstarch.
  • Stir in pineapple, chili sauce, raisins, sugar and cinnamon, and set aside.
  • In large skillet, lightly brown chops or chicken in oil and drain.
  • Pour pineapple mixture over chops or chicken.

1/2 cup seasoned bread crumbs
4 bone-in center-cut pork loin chops (6 ounces each)
3 tablespoons olive oil, divided
3 medium onions, thinly sliced
6 garlic cloves, minced
1/2 cup white wine or chicken broth
1 tablespoon Marsala wine or chicken broth
1/4 teaspoon pepper
1/8 teaspoon salt
1/4 cup cold butter, cubed
Hot cooked egg noodles

  • Place bread crumbs in a large resealable plastic bag. Add pork chops, one at a time, and shake to coat. If you don't have all four rums, you can improvise by doubling up (I would recommend making sure to use dark rum and coconut rum, however). Angostura bitters really make the drink, but could be left out if you don't have them (usually found in the tropical drink section at a supermarket or liquor store).
