OVEN FRIED BACON - NO MESS, NO CLEANUP!
This is my favorite way of making bacon, no mess, no cleanup! Comes out just like fried bacon crispy, fries in the oven in it's own bacon grease. The pepper is optional.

OVEN-BAKED BACON
I always bake bacon in the oven! You just need to plan a bit ahead as the bacon takes longer. With baking, the bacon grease stays nice and clean and you can reuse it to saute vegetables or eggs for extra flavor.

BAKED BACON (OVEN FRIED BACON)
Serves 100; allow 3 slices per serving. Reduce bacon by 6 lbs. for 2 slices per person. I used bacon I got over the meat counter in the store, so it was thicker. There were 12 slices per pound, so ask your butcher to weigh a pound and then count the slices. That way you'll have the correct amount. The bread is only here because I need more then one ingredient to post this. I like to fix ours this way when we have BLT's. Then all the bacon is still warm when we sit down to eat.

Steps:
- Oil not needed, only for a second ingredient so it would post.
- Arrange slices in rows, across pans with fat edges slightly overlapping lean edges.
- Bake 375 degrees without turning 20-25 minutes (depending on thickness) until bacon is slightly crisp.
- I have been draining the grease and flipping the bacon, then back in the oven for 5 minutes or so.
- Watch closely.
- DO NOT OVERCOOK.
- Drain or skim off excess fat at needed.
- Drain thoroughly on paper towels.
- For those with a convection oven use 325 degrees 20-25 minutes.
- The longer you bake after 20 minutes the greater the risk of producing a dry, burnt piece of bacon.

OVEN BACON
Cooking bacon in the oven gives you perfectly crispy slices without any flipping or fussing, and the cleanup is superspeedy. It's also the best way to make bacon for a crowd. You can cook the bacon directly on aluminum foil-lined baking sheets or on a wire rack set on top of the baking sheets. The latter method will give you extracrispy bacon, but you'll have to wash that greasy rack. Your choice!

Steps:
- Heat the oven to 450 degrees. Arrange the bacon in a single layer on 2 aluminum foil-lined rimmed baking sheets, or, for extracrispy bacon, arrange on 2 wire racks set over 2 foil-lined rimmed baking sheets.
- Bake until the bacon is browned and starts to ripple, or to desired doneness, 10 to 20 minutes. (Because the cook time depends on the thickness of the bacon and how you like it cooked, start checking doneness at the 10-minute mark.)
- Transfer the bacon to a paper towel-lined plate to drain.

Tips:
- Choose the right bacon: Thick-cut bacon works best for baking, as it holds up better and crisps up nicely. You can use regular or pre-cooked bacon, but pre-cooked bacon will crisp up more easily.
- Line your baking sheet: To make cleanup easier, line your baking sheet with parchment paper or aluminum foil. This will also help prevent the bacon from sticking to the pan.
- Don't crowd the pan: When placing the bacon on the baking sheet, make sure to leave some space between each piece. This will allow the bacon to cook evenly and crisp up.
- Bake at a high temperature: The key to crispy bacon is to bake it at a high temperature. This will help the fat render out and the bacon to crisp up. The ideal temperature for baking bacon is 400 degrees Fahrenheit.
- Flip the bacon halfway through cooking: For evenly cooked bacon, flip the pieces over halfway through the cooking time. This will ensure that both sides of the bacon are crispy.
- Drain the bacon on paper towels: When the bacon is done cooking, remove it from the oven and drain it on paper towels. This will help remove any excess grease.
- Use a cooling rack: If you want extra crispy bacon, place the bacon on a cooling rack after draining it on paper towels. This will allow the air to circulate around the bacon and help it to crisp up even more.
Conclusion:
Baking bacon is a quick and easy way to cook bacon without having to stand over the stove. It's also a healthier way to cook bacon, as it reduces the amount of grease that is consumed. Baked bacon can be used in a variety of dishes, such as sandwiches, salads, and pasta dishes. It can also be enjoyed as a snack.
