1/2 pound bow-tie pasta
1 teaspoon olive oil
1 clove garlic, minced
1 can (28 ounces) whole peeled tomatoes, in puree
1/4 teaspoon dried oregano
1/8 teaspoon sugar
Coarse salt
2 precooked chicken sausages, about 3 ounces each, cut crosswise into 1/4-inch-thick rounds
8 ounces mozzarella cheese, cut into small cubes (1 3/4 cups)
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees. Cook pasta according to package instructions. Drain; set aside.
  • Meanwhile, in a large saucepan, heat oil over medium. Add garlic; cook until fragrant, about 1 minute. Add tomatoes, oregano, and sugar. Bring to a boil, reduce to a simmer; cook, stirring and breaking up tomatoes until slightly thickened, 5 to 8 minutes. Season with salt.
  • Add pasta, sausage, and half the mozzarella; toss to combine. Transfer to a 2-quart baking dish. Top with remaining mozzarella and Parmesan. Bake until bubbly and top is lightly browned, 10 to 15 minutes.

1 small head broccoli, cut into florets
1 tablespoon extra-virgin olive oil, plus more for drizzling

1/2 teaspoon dijon or yellow mustard
1 1/2 cups milk

Steps:

  • Preheat the oven to 450 degrees F. Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, then drain and set aside (reserve the pot).
  • Meanwhile, toss the broccoli on a baking sheet with 1 tablespoon olive oil, the parmesan and garlic. Transfer to the oven and roast until the broccoli is slightly charred and the cheese starts browning, about 12 minutes.
  • Melt the butter in the reserved pasta pot over medium heat. Whisk in the flour; cook, whisking, until lightly toasted, about 2 minutes. Add the mustard and milk and cook, whisking occasionally, until thick and creamy, 4 to 5 minutes. Steps:

  • Preheat oven to 375°F. and butter a 3-to 4-quart gratin dish or other shallow baking dish.
  • In a heavy saucepan melt butter over moderately low heat. Add flour and cook roux, whisking, 3 minutes. Add milk and reserved tomato juice in a stream, whisking, and bring to a boil, whisking. Stir in tomatoes and salt and pepper to taste and simmer until thickened, about 3 minutes.

1 tablespoon oil
1 small onion, chopped
8 ounces lean ground beef or 8 ounces turkey
1 (14 ounce) jar spaghetti sauce, your choice
1 cup ricotta cheese or 1 cup low fat cottage cheese
1 egg
2 tablespoons grated parmesan cheese
1 cup mozzarella cheese, shredded

Steps:

  • Preheat oven to 425.
  • Grease 8x8 square baking dish.
  • In large pot boil 4 qts water and partially cook pasta for half of the directed time.
  • In large skillet heat oil over medium heat.
