Number Of Ingredients 16

1 large bunch broccoli rabe
2 tablespoons olive oil
salt + pepper (to taste)
1/2 teaspoon crushed red pepper flakes
1/2 cup fresh grated parmesan
12 pieces thin cut bacon
2 tablespoons honey
1/4 cup toasted pine nuts (chopped)
fresh herbs + cherry tomatoes (for serving (optional))
5 cloves garlic
1/2 cup full-fat plain greek yogurt
1/4 cup olive oil
1/2 cup fresh basil
juice of 1 lemon
pinch of crushed red pepper flakes
salt (to taste)

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with foil and place a cooking rack over the foil.
  • Place the broccoli rabe in a large bowl and toss with the olive oil, salt, pepper and crushed red pepper flakes.

  • Sprinkle the parmesan over the bunch of bacon wrapped broccoli rabe. Drizzle the honey over each piece of bacon. Place the pan in the oven and roast until the broccoli rabe is roasted + crisp and the bacon looks fully cooked, about 25 minutes. Remove from the oven and remove the toothpicks.
  • Sprinkle with freshly grated parmesan, chopped toasted pine nuts and cherry tomatoes if desired. Serve with the Basil Roasted Garlic Dip (recipe below).

BAKED BROCCOLI RABE WITH PARMESAN

Baked Broccoli Rabe With Parmesan image

Broccoli rabe usually doesn't make it past a sauté pan with garlic and olive oil, nor does it need to. But the extra step of baking it in the oven with a shower of grated Parmesan on top - a suggestion from the chef John Schenk that was written up in a 1997 Minimalist column - is one to try. Blanch the broccoli rabe until it's bright green and nearly tender, then cook it in a pan with golden toasted garlic. From there, put it in a baking dish, sprinkle with cheese, and bake until it the cheese melts, which Parmesan does unevenly - but in a good way. This is a recipe that can easily be started, stopped and picked back up later, either after the blanching or after the sautéing. It can also be served at room temperature, so despite the three-step cooking process, it's pretty flexible.

4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
Good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest

ROASTED BROCCOLINI AND LEMON WITH PARMESAN

Roasted Broccolini and Lemon With Parmesan image

Dumping cheese onto something, roasting it and calling it genius isn't the most original thought, but it's worth mentioning how wonderful this recipe is. Maybe it's the caramelized, jammy slices of lemon or maybe it's the almost burnt, crisp, frilly ends of tender broccolini. Whatever it is, a version of this is worthy of every dinner party. While there is something special about the broccolini here (nothing compares to the tender stalks and those wispy ends), this technique also works with root vegetables like carrots, potatoes and parsnips, as well as other brassicas like cauliflower and brussels sprouts. (This recipe is adapted from "Dining In: Highly Cookable Recipes" by Alison Roman.)

Provided by Alison Roman

Categories     vegetables, side dish

Time 20m

Yield 4 servings

Number Of Ingredients 6

1 lemon, halved crosswise, seeds removed
4 garlic cloves, smashed
2 bunches broccolini, ends trimmed (or 1 pound broccoli, thinly sliced lengthwise, stem and all)
3 to 4 tablespoons olive oil
Kosher salt and freshly ground pepper
½ cup finely grated Parmesan

Steps:

  • Heat oven to 425 degrees. Thinly slice half the lemon into rounds and set the other half aside. Toss lemon slices, garlic and broccolini with the olive oil on a rimmed baking sheet. Season with salt and pepper, making sure everything is evenly coated, especially the broccolini tips so they get fried and crisp.
  • Sprinkle with Parmesan and roast until the broccolini is bright green, starting to char and the cheese is golden brown, 10 to 15 minutes.
  • Remove from the oven, squeeze the remaining half of the lemon over the top and serve.

SPICY SAUSAGE BROCCOLI RABE PARMESAN

Spicy Sausage Broccoli Rabe Parmesan image

Simple, quick, inexpensive, and a little spicy. Delicious!!!

Provided by DMarie

Categories     World Cuisine Recipes     European     Italian

Yield 4

Number Of Ingredients 10

8 ounces whole wheat rotini pasta
3 bunches broccoli rabe, trimmed
4 (4 ounce) links hot Italian sausage, cut into 1 inch pieces
1 tablespoon sausage drippings
2 garlic cloves, chopped
1 (14.5 ounce) can diced tomatoes
salt and ground black pepper to taste
½ cup grated Parmesan cheese
¼ teaspoon crushed red pepper flakes
1 teaspoon olive oil, or to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 6 minutes. Drain well in a colander set in the sink.
  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the broccoli rabe, recover, and steam until just tender, about 2 minutes depending on thickness.
  • Place the Italian sausage into a large skillet over medium heat, and cook until browned and no longer pink inside, about 5 minutes. Remove sausage from pan and set aside; drain excess grease, leaving about 1 tablespoon of sausage drippings in the pan. Sprinkle in the garlic, and cook until it starts to brown, about 1 minute; stir in half the broccoli rabe. Cook and stir until the rabe has wilted, and add the remaining rabe and the diced tomatoes. Cook until all the rabe is tender, about 5 minutes; sprinkle with salt and black pepper.
  • Return the sausage to the skillet, and cook just until the meat is hot; sprinkle with Parmesan cheese, crushed red pepper flakes, and a drizzle of olive oil. Serve over hot rotini.

Tips:

  • Choose fresh, tender broccoli rabe: Look for broccoli rabe with bright green leaves and firm stems. Avoid any bunches that are wilted or have yellowed leaves.
  • Wash the broccoli rabe thoroughly: Rinse the broccoli rabe under cold water to remove any dirt or debris.
  • Trim the broccoli rabe: Cut off the tough ends of the stems and any leaves that are damaged or wilted.
  • Blanch the broccoli rabe: Blanching the broccoli rabe helps to tenderize it and preserve its color. To blanch, bring a large pot of salted water to a boil. Add the broccoli rabe and cook for 1-2 minutes, or until the broccoli rabe is bright green and tender. Immediately transfer the broccoli rabe to a bowl of ice water to stop the cooking process.
  • Drain the broccoli rabe: Once the broccoli rabe is cool, drain it well and pat it dry with paper towels.
  • Use a large baking dish: A large baking dish will help to ensure that the broccoli rabe cooks evenly.
  • Toss the broccoli rabe with olive oil, salt, and pepper: This will help to season the broccoli rabe and prevent it from sticking to the baking dish.
  • Roast the broccoli rabe in a hot oven: Roasting the broccoli rabe at a high temperature will help to caramelize the edges and give it a slightly crispy texture.
  • Garnish with Parmesan cheese and red pepper flakes: Once the broccoli rabe is roasted, garnish it with Parmesan cheese and red pepper flakes. This will add a delicious finishing touch to the dish.
