THREE-CHEESE CAULIFLOWER CASSEROLE

Three-Cheese Cauliflower Casserole image

There's no shortage of richness in this casserole. Here, three types of cheese and heavy cream result in something luxurious and comforting, perfect for colder weather. Make sure to drain and dry the blanched cauliflower well, since excess water could break the creamy sauce and make it separate. Serve as a side with any braised or roasted meat or, for a vegetarian dinner, balance it with a salad tossed with a bright, lemony vinaigrette.

Tips:

  • Choose the right cauliflower: Look for a head of cauliflower that is firm and white, with tightly packed florets. Avoid heads with brown or yellow spots, as these may indicate bruising or spoilage.
  • Cut the cauliflower into even-sized florets: This will help them cook evenly. If the florets are too large, they may not cook through properly, while if they are too small, they may overcook and become mushy.
  • Steam or boil the cauliflower until tender: This will help to soften the cauliflower and make it more receptive to the cheese sauce.
  • Make a creamy cheese sauce: There are many different ways to make a cheese sauce, but a simple béchamel sauce is a good option. To make a béchamel sauce, melt butter in a saucepan, then whisk in flour. Cook the mixture for a few minutes, until it is smooth and bubbly. Then, gradually whisk in milk, stirring constantly until the sauce has thickened. Finally, stir in grated cheese until melted.
  • Combine the cauliflower and cheese sauce: Once the cauliflower is cooked and the cheese sauce is made, combine the two in a baking dish. Stir until the cauliflower is evenly coated with the sauce.
  • Bake the cauliflower casserole: Bake the cauliflower casserole in a preheated oven until the cheese sauce is bubbly and the cauliflower is tender. This will usually take about 20 minutes.
  • Serve the cauliflower casserole hot: Cauliflower casserole is best served hot, straight out of the oven. It can be garnished with chopped parsley or chives.

Conclusion:

Baked cauliflower with cheese casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is a great way to get your daily dose of vegetables, and it is also a good source of protein and calcium. With a few simple tips, you can make a cauliflower casserole that is sure to please everyone at the table.
