8 slices home-style white bread or 8 slices Texas toast thick bread
3 tablespoons butter
1/2 cup milk, divided
2 cups gruyere or 2 cups swiss cheese, shredded (8 oz)
2 eggs, separated
1 tablespoon kirsch or 1 tablespoon cherry brandy
1 dash salt
1 dash pepper
1 dash nutmeg

Steps:

  • Butter bread and place butter-side down in 12x8" baking dish.
  • Sprinkle with about 2 tbsp milk.
  • Combine remaining milk, cheese, egg yolks, kirsch and seasonings; mix well.
  • Beat egg whites until stiff peak forms; fold into cheese and milk mixture.
  • Pour mixture over bread in baking dish.

2 cups grated Cheddar
2 cups grated Monterey Jack
1/2 cup mayonnaise
1/2 cup grated Parmesan
1/2 stick (4 tablespoons) butter, softened
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon seasoned salt
1 crusty French loaf

  • In a medium bowl, combine the Cheddar, Monterey Jack, mayonnaise, Parmesan, butter, salt, pepper and seasoned salt.

1kg floury potato , cut into bite-sized chunks
knob of butter
1 onion , chopped
200g smoked bacon , cut into small pieces
125ml dry white wine
142ml pot double cream
350g raclette cheese , grated
½ tsp smoked paprika

  • Heat oven to 200C/fan 180C/gas 6. In a large pan, boil the potatoes for 5 mins, then drain and tip into a large mixing bowl.
  • Melt the butter in a saucepan and gently fry the onion until soft. Add the bacon and cook for a further 5 mins. Mix the bacon and onion with the potatoes in the bowl.
