CHICKEN IN CORN FLAKES

Chicken in Corn Flakes image

Make and share this Chicken in Corn Flakes recipe from Food.com.

Provided by William Uncle Bill

Categories     Chicken

Time 50m

Yield 4 serving(s)

Number Of Ingredients 7

2 lbs skinless chicken breasts, bone-in if desired
1/4 cup mayonnaise (Miracle Whip preferred)
2 cups crushed corn flakes
2 tablespoons toasted sesame seeds
1/2 teaspoon granulated garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 350°F degrees.
  • Remove and discard any fat off chicken breasts and place chicken in a large mixing bowl.
  • Add mayonnaise and coat chicken well.
  • Crush corn flakes (not too fine) and place in a plastic bag.
  • Add sesame seeds, granulated garlic powder, salt and pepper and shake well to mix.
  • Drop coated chicken pieces into the plastic bag one at a time and shake well to coat.
  • Arrange chicken in an oven-proof baking dish or casserole dish.
  • Bake in preheated 350°F oven uncovered for 30 to 40 minutes or until chicken is cooked through.
  • You can also use other chicken parts, just make sure that the chicken is cooked through with no pink showing when done.

Tips:

  • Prep is Paramount: Before you start cooking, ensure all ingredients are measured, prepped, and ready to go. This will make the cooking process smoother and more efficient.
  • Choose the Right Pan: Use a heavy-bottomed pan or Dutch oven for even heat distribution and to prevent burning. A well-seasoned cast iron skillet is a great option.
  • Don't Crowd the Pan: Avoid overcrowding the pan with chicken and vegetables. This will prevent even cooking and may result in steamed, rather than roasted, vegetables.
  • Season Generously: Don't be shy with the seasonings! A good blend of herbs, spices, and salt will elevate the flavors of the chicken and vegetables.
  • Cook at High Heat: Start by searing the chicken at high heat to create a golden brown crust. This will help lock in the juices and add flavor.
  • Reduce Heat and Cook Low and Slow: After searing, reduce the heat and allow the chicken and vegetables to cook slowly and gently. This will ensure that the chicken is cooked through without drying out.
  • Use a Meat Thermometer: To ensure the chicken is cooked to perfection, use a meat thermometer to check the internal temperature. The safe internal temperature for chicken is 165°F (74°C).
  • Let it Rest: Once the chicken is cooked, remove it from the pan and let it rest for a few minutes before serving. This will allow the juices to redistribute, resulting in more tender and flavorful meat.

Conclusion:

Baked chicken and corn is a versatile and delicious dish that can be enjoyed for lunch, dinner, or even as a make-ahead meal. With careful preparation, simple ingredients, and a touch of patience, you can create a hearty and flavorful dish that will satisfy the whole family. Remember to prep your ingredients beforehand, choose the right pan, season generously, and cook at high heat initially before reducing it to low and slow. Use a meat thermometer to ensure the chicken is cooked through, and let it rest before serving. With these tips in mind, you'll be able to create a delicious and satisfying baked chicken and corn dish that will become a regular in your meal rotation.
