EASIEST CHICKEN RICE & VEGGIE CASSEROLE
Even though I can't eat chicken, this recipe is so ridiculously easy that sometimes I make it for my husband and daughter when I'm tired. It takes 10 minutes to throw together and has all the important food groups in it! If you use chicken thighs, its SUPER CHEAP too. Feel free to sub whatever "Cream of..." soup you like, we just happen to like mushrooms. Update: I think people were missing the part of the instructions that called for the 2 soup-can-fulls of water so I'm adding it into the recipe. This recipe is intentionally on the bland side, making it kid friendly or open to whatever spices and seasonings you prefer!

AUTUMN CHICKEN AND RICE
A classic chicken and rice dish with a little twist of wild rice and apples for a hearty, warming fall or winter supper. We used a seasoned packaged wild rice blend, but plain long grain and wild rice should work fine. If you're using plain, you may want to adjust your seasonings slightly, as your salt content will be lower.

Tips for the Best Baked Chicken and Rice with Autumn Vegetables:
- Use a variety of vegetables. This will give your dish a colorful and flavorful array of ingredients. Some good options include carrots, parsnips, sweet potatoes, Brussels sprouts, and squash.
- Cut the vegetables into uniform pieces. This will help them cook evenly.
- Season the vegetables well. Use a combination of salt, pepper, garlic powder, and paprika.
- Don't overcrowd the baking dish. If the vegetables are too crowded, they will not cook properly.
- Bake the chicken and vegetables until they are tender. The chicken should be cooked to an internal temperature of 165 degrees Fahrenheit, and the vegetables should be soft and slightly browned.
- Serve the dish immediately. This is when the chicken and vegetables are at their best.
