MEXICAN CHICKEN LEGS
It can be any pieces of chicken. I tried it with boneless chicken breasts. You may adapt the cooking time. To make it low-sodium you may omit the salt and celery salt. Maybe celery seeds would be great.

BAKED CHICKEN LEGS, MEXICAN STYLE
From the Sunset Potluck Cookbook. I love baked chicken recipes! And I especially like to collect recipes which call for those leg and thigh pieces, because those are always cheaper than most cuts of chicken. The recipe recommends serving with guacamole or a squeeze of lime juice.

SIMPLE BAKED CHICKEN LEGS
We have some family members who love chicken legs, and every now and then, I have enough to treat them. This recipe starts with a simple salt water brine that makes them tender and juicy and removes discoloration that is sometimes found along the bone. Season it up with Italian flavors, as suggested, or use your own favorite combo!

- Stir water and salt together in a separate bowl until salt dissolves. Pour salt water over the chicken legs, cover, and refrigerate for at least 1 hour, or up to 24 hours.
- When ready to cook, preheat the oven to 375 degrees F (190 degrees C). Grease a pan large enough to accommodate the chicken legs without crowding them, about 8-inch square.

Tips:
- Use a flavorful marinade: The marinade is what gives the chicken its flavor, so make sure to use a flavorful one. This recipe uses a combination of chili powder, cumin, garlic, and lime juice.
- Cook the chicken legs over indirect heat: This will help to prevent them from drying out. If you are using a charcoal grill, place the chicken legs on the opposite side of the coals from the fire. If you are using a gas grill, turn off the burner directly under the chicken legs.
- Baste the chicken legs frequently: This will help to keep them moist and prevent them from burning. Use a brush to baste the chicken legs with the marinade or a mixture of olive oil and water.
- Cook the chicken legs until they are cooked through: The chicken legs are cooked through when they reach an internal temperature of 165 degrees Fahrenheit. You can check the internal temperature of the chicken legs with a meat thermometer.
Conclusion:
These Mexican-style baked chicken legs are a delicious and easy-to-make dish that is perfect for a weeknight meal. The chicken legs are marinated in a flavorful mixture of chili powder, cumin, garlic, and lime juice, then baked until they are cooked through. Serve the chicken legs with your favorite sides, such as rice, beans, or tortillas.
