Number Of Ingredients 11

1 1/2 cups (375 g) cooked chickpeas or 1 can (15 ounces, or 420 g), rinsed and drained
1/4 cup (24 g) nutritional yeast
1 teaspoon dried thyme or 1 tablespoon fresh
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder or 1 clove
garlic, minced
1 ⁄8 teaspoon ground rosemary
1/2 cup (120 ml) unsweetened nondairy milk
1 cup (120 g) vital wheat gluten flour
2 to 3 cups (216 to 324 g) bread crumbs, for coating (I like to use whole wheat panko)

Steps:

  • Preheat the oven to 350˚F (180˚C, or gas mark 4). Oil two cookie sheets *or line with parchment paper. Add everything except the wheat gluten flour and bread crumbs to a food processor and purée. Add 2⁄3 cup (80 g) of the gluten flour and process until combined. Then process a minute or two more, letting the food processor do the kneading for you. Put the mixture on a cutting board. Knead in the remaining 1⁄3 cup (40 g) wheat gluten. Cut the dough into 10 pieces, roll into little balls, and press into patties between your hands. You want to make the patties thinner than your desired end result because they will puff up some during baking. Spread the bread crumbs on a plate and press the patties into the crumbs, and then turn and press on the other side. The dough should still be wet enough for the bread crumbs to stick. Place the breaded patties on the sheet pan. Bake for 15 minutes. Flip them over using a wide spatula and bake for 5 to 10 minutes more. Serving Suggestions & Variations Shape the dough into stars, strips, nuggets, or other shapes before coating. These freeze well, so make a double batch and enjoy them for a few effortless meals. Think vegan cheese and marinara sauce, use them in sandwiches, or use them to veganize some of your old favorite recipes.

CRISPY CAJUN CHICKPEA CAKES (VEGAN)

Crispy Cajun Chickpea Cakes (Vegan) image

I thought this recipe was not only easy to make, it was fantastic. I made it for my lunch today. It is from the VeganDadblogspot.com. While the chickpea cakes were good on their own, I thought they were even better with Recipe #503808 (not vegan) dolloped on top. A remoulade sauce would also probably be very good. Vegan Dad said he made these mild in order to be kid friendly. I increased the cayenne (several pinches) and I used a couple teaspoons of hot sauce. Do what suits your tastes. He served for dinner along with a rice dish. Vegan Dad also says if you have trouble forming the patties (I didn't), add some more cornstarch to hold it all together. Mine held their shape throughout the frying. Prep time includes 30 minute chill time.

Yield 12 cakes

Number Of Ingredients 14

1 tablespoon oil
1/4 cup diced onion
1/4 cup diced green pepper
1 stalk celery, diced
1 (28 ounce) can chickpeas, rinsed and drained
1 teaspoon dried thyme
1 teaspoon paprika
1 pinch cayenne pepper (or more to taste)
1 teaspoon hot sauce (or more to taste)
2 tablespoons chopped fresh parsley
2 tablespoons flour
1 tablespoon cornstarch
salt and pepper
oil (for frying)

Steps:

  • Heat oil in a frying pan over medium heat. Saute onion, green pepper, and celery for 5-7 mins, until softened. Remove from heat.
  • Place chickpeas in a food processor along with the onion mixture. Pulse until chickpeas are no longer whole, but don't process them too much. Place chickpeas in a bowl and add spices, hot sauce, and parsley. Mix well. Add flour and cornstarch and mix well. Place in the fridge for 30 minutes.
  • Heat oil in a frying pan over med/med-hi heat (around 350 degrees). Shape chickpea mixture into 12 patties and fry in batches, about 2-3 mins per side, or until crispy and browned. Flip a few times if they are browning too quickly.

CHICKPEA SAMOSAS RECIPE - (5/5)

Chickpea Samosas Recipe - (5/5) image

Provided by ngteller

Number Of Ingredients 18

225 g Plain Flour, For Pastry
1 ½ tsp Fine Salt, For Pastry
1 Tbsp Melted Butter, For Pastry
6 Tbsp Warm Water, For Pastry
2 Tbsp Vegetable Oil
1 tsp Curry Powder
1 tsp Garam Masala
½ tsp Cumin , ground
½ tsp Turmeric, ground
1 Small Onion, peeled and finely chopped
1 Garlic Clove, peeled and finely chopped
1 inch Ginger Root, peeled and grated
1 Green Chilli, deseeded and finely chopped
1 can (15 ounces) Chickpeas, rinsed and drained
200 ml Water
½ tsp Salt
100 g Peas, thawed if frozen, blanched if fresh
½ Lemon, juiced

Steps:

  • To make the pastry, combine the flour and salt in a large bowl. Make a well in the centre and add the melted butter and 5 tbsp warm water. Mix with a round-bladed knife to form a dough, adding another 1 - 3 tsp water if the mixture seems too dry. Tip onto a lightly floured surface and knead for 5 - 10 mins to a smooth dough. Wrap in cling film and leave to rest in a cool part of the kitchen for at least 30 mins. For the filling, heat the oil in a wide frying pan or wok. Add the curry powder, garam masala, cumin and turmeric and cook, stirring, for 30 seconds. Next, add the onion, garlic, ginger and chilli and cook until the onion is softened and the spices are fragrant, about 4 - 5 mins. Tip in the chickpeas, then add the water and salt. Cook, stirring gently, until most of the water has been absorbed, then take off the heat. Stir in the peas and lemon juice to taste. Transfer to a bowl and let cool completely. Divide the pastry into 6 or 7 equal pieces. Now roll out the pastry and shape the samosas following my guide (on the preceding pages). Heat a 6cm depth of oil in a deep heavy-based saucepan or wok over a medium heat to 180 - 190ºC. To test, drop a bread cube into the oil; it should sizzle on contact. Deep-fry the samosas in batches until golden brown and crisp, 6 - 8 mins. Drain on a tray lined with kitchen paper and keep warm in a low oven while cooking the rest. Serve hot or warm.
