Every time that I make this cheesy baked spaghetti, I get requests for the recipe. It puts a different spin on pasta and is great for any meal. The leftovers, if there are any, also freeze well for a quick dinner later in the week. -Ruth Koberna, Brecksville, Ohio

SOPA DE FIDEO
Sopa de fideo is a quick and comforting Mexican staple that is particularly good on a chilly weeknight. The acidity from tomatoes, the bold garlic flavor and the luscious strands of fideo, a thin noodle similar to angel hair that's typically included in Mexican soups, make for a hearty dish. Toppings for sopa de fideo vary, but common garnishes include avocado slices, sautéed mushrooms, lime juice, queso fresco, cooked potatoes, Mexican cream - the list goes on!

FIDEO
A favorite lunch dish at our house. I started with Debbwl's Recipe #366582 and made some adjustments to suit our tastes. We think it tastes very similar to spaghettios. Stewed tomatoes with sugar is necessary for the slightly sweet taste - if you substitute diced tomatoes, add a bit of sugar. I usually buy fideo in the ethnic food section (it's a popular pasta in Mexico). I have also substituted the tiny ABC pastas, but they take just a bit longer to cook.

Steps:
- In a non-stick skillet, heat the oil over medium to medium-high heat. Add the fideo and fry until golden brown. Remove from pan and set aside.
- If you don't like chunky tomatoes - pulse in food processor until they are of desired consistency.
- In same pan bring tomatoes, water and salt to a boil.
- Return pasta to pan with boiling tomatoes. Simmer, partially covered, for about 10 minutes. Stir occasionally to keep noodles from sticking. It's done when liquid is absorbed and pasta is tender.
- Remove from heat and stir in grated parmesan.
- Cover and let stand 5 minutes before serving.
Tips:
- Use high-quality ingredients: Fresh, high-quality ingredients will make a big difference in the flavor of your baked fideo. Look for fresh vegetables, flavorful cheeses, and a good-quality pasta.
- Don't overcook the pasta: The pasta should be cooked al dente, or slightly firm to the bite. Overcooked pasta will be mushy and not as flavorful.
- Use a variety of vegetables: Baked fideo is a great way to use up leftover vegetables. Feel free to add your favorite vegetables to the dish, such as broccoli, carrots, zucchini, or bell peppers.
- Season the dish well: Baked fideo should be well-seasoned with salt, pepper, and other spices. You can also add a pinch of red pepper flakes for a little heat.
- Bake the dish until it's golden brown: The baked fideo should be baked until it's golden brown and bubbly. This will give it a nice crust and a flavorful filling.
Conclusion:
Baked fideo is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's easy to make and can be tailored to your own taste preferences. With its combination of pasta, vegetables, cheese, and spices, baked fideo is a surefire hit with the whole family. So next time you're looking for a quick and easy meal, give baked fideo a try. You won't be disappointed!
