BROWN RICE AND LENTIL CASSEROLE
This is a great meal that we eat here often in the winter time. With some dark bread and maybe a salad it is a really hearty meal, though we have been known to eat just this for dinner. The recipe is adapted from Amy Dacyczyn's "The Complete Tightwad Gazette"

Tips:
- Use a variety of lentils. Lentils come in a variety of colors and sizes, each with its own unique flavor and texture. For this recipe, we recommend using a mix of brown, green, and red lentils.
- Soak the lentils before cooking. Soaking the lentils for at least 30 minutes before cooking will help them cook more evenly and reduce the cooking time.
- Use a flavorful broth. The broth you use to cook the lentils will add a lot of flavor to the casserole. We recommend using a vegetable broth, but you can also use chicken broth or beef broth if you prefer.
- Add your favorite vegetables. This recipe is a great way to use up leftover vegetables. Feel free to add any vegetables you like, such as carrots, celery, onions, potatoes, or mushrooms.
- Don't overcook the lentils. Lentils are done cooking when they are tender but still hold their shape. Overcooking them will make them mushy.
- Serve the casserole hot or cold. This casserole can be served hot or cold, making it a great option for meal prep. Leftovers will keep in the refrigerator for up to 3 days.
Conclusion:
This lentil casserole is easy to make, affordable, and so delicious! It's also healthy and packed with protein, making it a great meal for families of all ages. Give this recipe a try and let us know what you think!
