- In a small bowl, whisk the first eight ingredients until blended. Pour 1 cup marinade into a large resealable plastic bag. Add chicken; seal bag and turn to coat. Refrigerate 1 hour. - Place chicken between 2 sheets of heavy plastic on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a your desired thickness. Season with salt and pepper. Place chicken in a baking pan.
- Combine 3/4 of the lemon juice, onion, 1/4 cup olive oil, garlic, and oregano in a bowl. Pour marinade over the chicken.

- Sprinkle all sides of eggplant with salt; let rest to release moisture, about 30 minutes. Rinse off the salt. Make deep, crisscross cuts through the eggplant flesh, leaving the skin intact.
