Four 6- to 7-ounce salmon fillets, skin-on
1/2 cup low-fat mayonnaise
1/4 cup Dijon mustard
1/4 cup honey
2 tablespoons finely chopped chives, plus additional for garnish

  • Preheat the oven to 375 degrees F. Line a large baking sheet with a nonstick silicone liner, and lay the salmon, skin side down, on top. Set aside.

3 Tbsp olive oil
sea salt
3 Tbsp minced fresh parsley leaves
2 Tbsp Dijon mustard
2 Tbsp minced fresh dillweed
2 tsp freshly squeezed lemon juice
sea salt and pepper to taste

  • Preheat oven to 350°F. Spray the bottom of a glass baking dish with olive oil spray. Wash salmon and dry pat. Rub with olive oil, sprinkle with coarse pepper, and place skin-side down in pan.
