Categories     Breakfast

Time 35m

Yield 6 serving(s)

Number Of Ingredients 11

1 cup rice, uncooked
2 1/2 cups tomatoes, cooked (canned is fine)
1/4 cup onion, minced
3/4 teaspoon salt
1 bay leaf
2 whole cloves
2 tablespoons butter, melted
2 tablespoons flour
1/4 cup cheese, grated
1/2 cup breadcrumbs, buttered
6 eggs

Steps:

  • Preheat oven to 350F and grease a casserole dish very well.
  • Cook rice in boiling salted water until tender; drain and rinse with hot water.
  • Simmer tomatoes, onion, salt, bay leaf and cloves together for ten minutes; strain.
  • Blend butter with flour in saucepan and add the strained tomatoes slowly, stirring constantly.
  • Arrange a layer of rice in prepared casserole dish; make six depressions in the rice.
  • Place an egg in each depression, pour tomato sauce over all and sprinkle with cheese and bread crumbs.
  • Bake until eggs are set, about 15 minutes.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the rice will taste. Use long-grain rice, such as basmati or jasmine, for the best results.
  • Rinse the rice before cooking: This will help to remove any starch and prevent the rice from sticking together.
  • Use a heavy-bottomed pot: This will help to distribute the heat evenly and prevent the rice from burning.
  • Sauté the rice in butter or oil before adding the liquid: This will help to toast the rice and give it a nutty flavor.
  • Use a flavorful liquid: Chicken broth, vegetable broth, or tomato sauce are all good options.
  • Season the rice: Use salt, pepper, garlic powder, and onion powder to taste.
  • Bake the rice until it is tender and fluffy: This will usually take about 20 minutes.
  • Let the rice rest before serving: This will help the rice to absorb the flavors.

Conclusion:

Baked Spanish rice is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is also a great way to use up leftover rice. With a few simple ingredients and a little bit of time, you can make a delicious and satisfying meal that the whole family will enjoy.
