1 medium butternut squash
1 medium acorn squash
Coarse grain salt and freshly ground black pepper
Olive oil

Steps:

  • Preheat oven to 400 degrees F.
  • Peel the squash. Cut each squash lengthwise and scoop out the seeds. Cut each squash crosswise into half moons.
  • Sprinkle with salt and pepper and brush with a thin coat of olive oil.
  • Lay squash on a cookie sheet and bake for 25 to 30 minutes, turning once, or until tender to the touch and golden.

This is just one of 6 different squashe I bought up at GreenBluff, WA. ...right from the farmers that sell produce that they grow. I only bought 2, so I will make another trip.. for more. 1 delicata squash...1/2 inch slices
1 Tbsp olive oil
2 Tbsp butter, melted
salt & pepper...to taste
1 Tbsp chopped fresh or dried...thyme

Steps:

  • 1. Pre-heat oven to 425F Wash & slice squash, into 1/2 to 3/4 inch slices. Cut out center with the seeds.
  • 2. Put slices on a cookie sheet, (I line mine with foil) Do not let them touch each other.
  • 3. Brush on the mixed, olive oil & butter. Turn and brush again. Salt & pepper, and thyme...if wanted. Bake for 20 minutes. Turn once after 10 minutes. When ready to serve stack up onto a plate....like a leaning tower !...The skin on delicata can be eaten.
