Pumpkin takes a while in the oven to soften, so you have to be willing to let it bake a couple of hours, but in my opinion, it's well worth the wait.

Number Of Ingredients 10

3 tablespoons melted butter
1 medium fresh pumpkin
1/2-1 lb ground beef
1/2 cup brown sugar, divided
1/2 cup cabbage, chopped
1 medium onion, chopped
1/2 cup bell pepper, chopped
1/2 cup sweet corn
1/2 cup instant barley
2 tablespoons oil

Steps:

  • Preheat oven to 350 .
  • Cut top from pumpkin and clean.

  • Add remaining brown sugar on top. Put on pumpkin top.
  • Place pumpkin in a shallow pan with 2" of hot water. Bake for 1 1/2 to 2 hrs., or until tender.

Tips:

  • Choose the right pumpkin: Look for a sugar pumpkin or pie pumpkin that is about 3-4 pounds. These pumpkins are smaller and have a sweeter, denser flesh than larger pumpkins.
  • Cut the pumpkin in half: Use a sharp knife to cut the pumpkin in half lengthwise. Scoop out the seeds and pulp from the center of the pumpkin.
  • Roast the pumpkin halves: Place the pumpkin halves cut-side up on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast the pumpkins in a preheated oven at 400 degrees Fahrenheit for about 45 minutes, or until they are tender.
  • Prepare the stuffing: While the pumpkins are roasting, prepare the stuffing. There are many different types of stuffing that you can use, such as bread stuffing, rice stuffing, or sausage stuffing. Simply follow the instructions in your favorite stuffing recipe.
  • Stuff the pumpkins: Once the pumpkins are roasted and the stuffing is prepared, spoon the stuffing into the pumpkin halves. Bake the stuffed pumpkins in the oven at 350 degrees Fahrenheit for about 30 minutes, or until the stuffing is heated through.
  • Serve the stuffed pumpkins: Let the stuffed pumpkins cool slightly before serving. You can garnish the pumpkins with fresh herbs, such as parsley or thyme.
