1 ½ lb chicken breast, chopped into bite-size pieces
1 tablespoon soy sauce
1 cup cornstarch, plus 1 tbsp, divided
1 large egg
1 pineapple
2 tablespoons vegetable oil, plus more for frying
½ red bell pepper, chopped
½ green bell pepper, chopped
½ cup white onion, chopped
2 teaspoons garlic, minced
1 teaspoon ginger, minced
¼ cup rice vinegar
¼ cup sugar
3 tablespoons ketchup
white rice, cooked, for serving
scallion, sliced, for garnish
sesame seed, for garnish

Steps:

  • In a large bowl, combine the chicken with 1 tablespoon soy sauce, 1 tablespoon cornstarch, and 1 egg. Cover and marinate in the fridge for 20 minutes.
  • Cut the pineapple in half lengthwise and carefully cube the fruit in each half, leaving the outside of the pineapple intact. Scoop out the cubed pineapple and set aside.
  • Place the remaining cup of cornstarch in a separate large bowl and toss the marinated chicken pieces until liberally coated. Shake off excess.
  • Fill medium pot halfway with oil and heat until the oil reaches 350˚F (180°C).
  • Fry the chicken for 4-5 minutes, until the coating is golden brown and the chicken is cooked throughout. Transfer to a wire rack set over paper towels to drain.
  • To make the sauce, heat 2 tablespoons of vegetable oil in a medium frying pan over a medium heat. Sauté the bell pepper and onion for 2-3 minutes, until softened.
  • Add the garlic and ginger, and cook until fragrant.
  • Add the vinegar, sugar, and ketchup, and stir. Bring the mixture to a boil.
  • Add the pineapple cubes and warm thorough.
  • Add the chicken to the frying pan and toss to coat with the sauce.
  • Scoop the mixture into the hollowed out pineapple along with a scoop of rice.
  • Garnish with scallions and sesame seeds.

1 1/2 lbs chicken breasts (cut into 1 in cubes)
1 onion, peeled and diced
1 red bell pepper, seeded and diced
2 (8 ounce) cans pineapple chunks, undrained
1 tablespoon cornstarch
1 tablespoon soy sauce
1/3 cup sugar
1/3 cup chicken broth
3 tablespoons white wine vinegar
3 drops red food coloring (optional)

Steps:

  • Heat oil in a nonstick skillet over medium-high heat.
  • Add chicken and saute until golden brown (about 5 mins).
  • Add the onion and bell pepper and saute until vegetables beginto soften (about 5 mins).
  • Add pineapple chunks with juice, mix well.
  • Reduce heat to a simmer and cover.
  • In a bowl combine cornstarch and soy sauce.
  • Add sugar, chicken broth, vinegar, and if desired food coloring.
  • Blend throughly to remove any lumps.

1 pound skinless, boneless chicken thighs, cubed
¼ cup shoyu (soy sauce)
½ cup oil for frying, or as needed
½ cup all-purpose flour
5 tablespoons cornstarch, divided
⅛ teaspoon ground black pepper
¾ cup white sugar
1 cup water, divided
½ cup white vinegar
½ large yellow onion, cut into chunks
1 (8 ounce) can pineapple chunks, drained
1 large green bell pepper, cut into chunks

Steps:

  • Combine chicken and soy sauce in a glass or ceramic bowl and let marinate in the refrigerator for 1 hour.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Heat oil in a large wok to 350 degrees F (175 degrees C).
  • While the oil is heating, whisk flour, 2 tablespoons cornstarch, and black pepper together in a shallow dish. Dredge chicken in flour mixture.
  • Fry chicken in batches in the hot oil until golden brown and crispy and no longer pink in the centers, 5 to 8 minutes per batch. Remove to a plate.
  • Discard any oil remaining in the wok. Return the wok to medium-high heat and add sugar, 1/2 cup water, and vinegar. Heat through, stirring frequently until sugar dissolves. Add onion and continue cooking for 1 minute.
  • Meanwhile, mix remaining cornstarch into remaining 1/2 cup water and stir until completely mixed. Add to vinegar mixture in the pan along with pineapples and bell pepper chunks. Continue cooking until sauce thickens and bell peppers are just cooked, about 3 minutes. Add chicken and toss to coat.

This is one of our favorite sweet and sour chicken dishes at our house, if you have any on hand add in about 1 cup of apricot preserves to this it seems to kick up the flavor! --- all the ingredients may be adjusted to suit taste, and the sauce may be easily doubled if using more chicken.

1/4 cup butter
1 medium chopped onion
1 medium green bell pepper, coarsley chopped
1 tablespoon minced fresh garlic (optional)
1 cup carrot, coarsley chopped
3/4-1 cup ketchup
1 cup pineapple juice (reserve this juice from the tidbits)
2 -3 tablespoons white vinegar (or to taste)
1/4-1/3 cup light brown sugar (or to taste)
2 tablespoons soy sauce (or to taste)
salt and pepper
1/4-1/2 teaspoon ground ginger powder (or to tase)
1 (16 ounce) can pineapple tidbits (reserving the juice)
3 -4 lbs chicken pieces

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking dish (or a larger baking dish or roaster if using more chicken and doubling sauce).
  • In a medium saucepan, saute the onions, green pepper and carrots for about 3 minutes; add in the fresh garlic (if using), and saute for another 3 minutes.
  • Stir in the ketchup, pineapple juice, vinegar, brown sugar, soy sauce, salt, pepper and the ginger powder; stir with a spoon until all the ingredients are well mixed; bring to a light to a boil (at this point adjust all of the ingredients, adding in more to suit taste, and bring to a boil again for a couple of minutes).
  • If you prefer a thicker sauce, mix cornstarch with cold water to make a thin paste, add to sauce and boil another minute.
  • Add in the pineapple chunks/tidbits: set the sauce aside.
  • In a large frypan, sprinkle the chicken with black pepper, and brown on both sides in oil until lightly browned (do not burn the skin!).
  • Set the browned chicken pieces into the baking dish/roaster.
  • Pour the sauce over the chicken; mix lightly to make sure the chicken is evenly coated with sauce.
  • Bake uncovered for about 40 minutes, or until the chicken is tender and cooked.
  • Serve with or over rice -- delicious!

2 (8 ounce) cans pineapple tidbits in juice
1 red bell pepper, seeded and cut into 1-inch pieces
1 green bell pepper, seeded and cut into 1-inch pieces
1 carrot, peeled and sliced diagonally
½ red onion, cut into 1-inch pieces
3 tablespoons avocado oil
salt and ground black pepper to taste
1 ½ pounds skinless, boneless chicken breast, cut into 1-inch pieces

½ cup light brown sugar
⅓ cup rice vinegar

3 tablespoons soy sauce

  • Preheat the oven to 425 degrees F (220 degrees C).
