1 yellow onion, halved and sliced
1 red bell pepper, chopped
2 tablespoons balsamic vinegar
salt and pepper to taste
2 (8 ounce) fillets tilapia fillets
2 teaspoons olive oil
1 cup crumbled blue cheese
4 cups mixed salad greens

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).

Ingredients needed are minimal - I made it up with what I had on hand and it turned out beautifully. My husband loved it and he isn't much of a fish eater.

5 -6 tilapia fillets, thawed
1/2 cup grape tomatoes, halved
1/2 yellow sweet onion, large dice
2 -3 tablespoons balsamic vinegar
olive oil or butter
salt and pepper

Steps:

  • Add 1 tbs. olive oil to small saute pan.
  • Add onions and cook until tender.
  • Add tomatoes to onion and let cook until tomatoes begin to lose their shape.
  • Turn heat to medium/low and add 2 tbs. balsamic vinegar to onion and tomato mixture. Stir and let simmer while you prepare the fish.
  • Coat a large frying or saute pan with olive oil over medium heat.
  • Season fillets with salt and pepper then add to pan. The fish will cook very quickly. Try to flip only once. The fish is done when it begins to flake easily - in about 4-5 minutes total.
  • To serve, plate fish and spoon the tomato/onion mixture over the fish - about 1/4 cup per fillet. Serve immediately.

  • Prep the Tilapia and marinate with salt, pepper, a sprinkle of lemon juice and rubbed with olive oil. Set aside for about 5-10 Minutes. Pre-Heat the oven at 450* in the meantime and prep the toppings. In a medium saucepan, heat about a tablespoon of olive oil and in medium-high setting. Caramelize the onions till golden brown and add the bell peppers. Stirring occasionally, cook until the peppers are soft then stir in the tomatoes and add 3 Tablespoons of Balsamic Vinaigrette.
