4 (14 1/2 ounce) cans green beans, drain 3 cans
8 slices bacon, cooked crisp and drained
pepper
1 onion, chopped
4 tablespoons butter
1 teaspoon dark brown sugar, divided
1 tablespoon good balsamic vinegar
salt and pepper
2 -4 tablespoons bacon butter pan drippings
1 tablespoon good balsamic vinegar, divided
2 tablespoons butter

Steps:

  • Fry bacon in pan til done sprinkling both sides as it cooks with coarse ground pepper.
  • Drain on paper towels, set aside.
  • Add half a stick of butter to bacon grease, (4 Tbl.).
  • Add chopped onion and 1 Tbl. balsamic vinegar and cook slowly over low heat for about 20 minutes til soft and sweet.
  • Remove from heat.
  • In crockpot, put 2 cans (drained) green beans.
  • Sprinkle with a little salt and pepper.
  • Sprinkle with half the bacon, broken into small pieces.
  • Sprinkle with half the cooked onions.
  • Sprinkle with half, (1/2 tsp.), dark brown sugar.
  • Drizzle with 1-2 Tbl. bacon/butter grease from pan. (Yes, do this.)LOL.
  • Drizzle with 1/2 Tbl. balsamic vinegar.
  • Repeat everything (*just draining one can, and add the fourth (last) can of green beans with the water from can pouring over evenly.).
  • Give all this a VERY gentle fold, folding only 2-3 times. Any more, and your green beans will begin to break up.
  • Cut up your 2 Tbl. butter into 8 pieces and dot top.
  • Cover and heat over high til hot throughout.
  • About 45 minutes.
  • You can also do this on the stove, or even in the oven in a casserole dish (covered.).

1 sweet onion, sliced (such as Walla Walla, Vidalia, etc.)

1 orange, juice and zest of, medium
2 tablespoons aged balsamic vinegar
3 tablespoons tangerine- pomegranate juice (such as PomWonderful, or a blend of cranberry and orange juices, read *NOTE)

  • *NOTE: I used 1 tablespoon freshly squeezed tangerine juice, 1 tablespoon pomegranate syrup and 1 teaspoon sugar in place of the PomWonderful.
  • In a pot, steam green beans until fork-tender, 5 minutes for small green beans but as long as 15 minutes for larger green beans.

Also, it has less calories than the Nutrition Facts calculate because you remove the skin after browning.

8 bone-in skin-on chicken thighs (about 3 pounds, trimmed of excess fat and skin)
salt & fresh ground pepper
1 tablespoon olive oil
1 large onion, halved and sliced about 1/4 inch thick (about 2 cups)
1 tablespoon tomato paste
3 garlic cloves (minced or pressed through garlic press, about 1 tablespoon)
1 anchovy fillet, minced (about 1 teaspoon)
1 (14 1/2 ounce) can diced tomatoes
2 cups low sodium chicken broth
1/4 cup dry red wine
1/4 teaspoon red pepper flakes
1 1/2 tablespoons chopped fresh thyme leaves
1 bay leaf
1/2 lb green beans, ends removed and cut in half
1/2 cup balsamic vinegar

Steps:

  • Adjust oven rack to lower-middle position; heat oven to 350 degrees. Season chicken thighs with salt and pepper. Heat oil in nonreactive Dutch oven over medium-high heat until shimmering but not smoking; add chicken thighs skin-side down and cook without moving them until skin is crisped and well browned, 10 to 12 minutes. Using tongs, turn chicken pieces and brown on second side, about 5 minutes longer; transfer thighs to large plate.
  • Pour off all but 1 teaspoon fat from pot. Add onion and tomato paste and cook over medium heat, stirring occasionally and scraping bottom of pot with wooden spoon, until tomato paste begins to darken, about 4 minutes (if bottom of pot becomes very dark and sticky, stir in 1 to 2 tablespoons water, juice from tomatoes or some of chicken broth).
  • Add garlic and anchovy and cook, stirring constantly, until fragrant, about 1 minute.
  • Stir in tomatoes, chicken broth, and wine, scraping up browned bits with wooden spoon.
  • Add red pepper flakes, thyme, and bay.
  • Remove and discard skin from chicken thighs, then submerge chicken bone-side up in liquid, adding any chicken juices accumulated on plate.
  • Increase heat to high, bring to simmer, cover, then place pot in oven.
  • After 30 minutes add green beans. Cook chicken for another 10 minutes or until done (when it offers no resistance when poked with tip of paring knife but meat still clings to bone).
  • While chicken cooks, simmer balsamic vinegar in 8-inch nonreactive skillet over medium-high heat until thick, syrupy, and reduced to 1/4 cup, 3 to 5 minutes (begin measuring volume when vinegar begins to cling to sides of saucepan). Set aside.
  • Using slotted spoon, transfer chicken to plate and tent with foil (I don't always tent it, too lazy); discard bay leaf.
  • Bring liquid in Dutch oven to simmer over medium-high heat and cook until the beans are of the tenderness you like.
  • Stir about 1/3 cup sauce into balsamic reduction to loosen, then stir mixture into sauce; adjust seasoning with salt and pepper.
  • Return chicken and accumulated juices to sauce, cook long enough to warm chicken, turning once or twice. Serve immediately.

3/4 cup freshly grated parmigiano-reggiano cheese
1 large garlic clove, crushed

1 1/2 lbs green beans, trimmed and cut into 1 inch long pices. (or a combination of green beans and diced potatoes)
4 tablespoons balsamic vinegar
1/2 teaspoon dark brown sugar

Steps:

  • Making the Pesto:.
  • Combine the basil and Parmigiano-Reggiano cheese in a blender or food processor and blend until the basil is finely chopped, but not pureed.
  • Add the olive oil, and garlic and blend until almost smooth.
  • Season with salt and pepper and set aside.
  • Cooking the Beans:.
  • Pour about 2 inches of water into a 6 quart pot.
  • Place a collapsible steamer in the pot, cover, and bring to a full boil.
  • Place beans in the steamer, cover the pot, and steam 6 minutes, or until tender crisp.
  • Mix 4 tablespoons balsamic vinegar with 1/2 teaspoon dark brown sugar.
  • Remove the beans to a shallow serving bowl.
  • Add the pesto to the beans, stirring in the vinegar/sugar mixture.
  • Toss to thoroughly coat the beans.
  • Taste for seasoning and serve hot or at room temperature.

2 tablespoons balsamic vinegar
1 large garlic clove
salt and pepper
3 -4 cups green beans
1/2 medium onion
1/2 lemon

  • Preheat oven to 425 degrees Fahrenheit. In a medium bowl, combine the balsamic vinegar, honey, a tablespoon of olive oil, garlic, thyme, rosemary, chili flakes, salt and pepper. Stir well to mix. Allow the chicken to rest for 5-10 minutes. Spoon juices over the top and serve.

I like this as a side dish when we have grilled steak or a marinated flank steak. The balsamic and Parmesan touch really adds a lot of flavor.

1 lb fresh green beans, cut into 2-inch strips
8 oz sliced button mushrooms (brown cremini mushrooms work well, too)
1 medium onion, halved and then cut into thin half-rings
1 1/2 Tbsp olive oil
1 Tbsp balsamic vinegar
1 tsp salt
1 tsp black pepper
1 Tbsp fresh basil, chopped
2 Tbsp parmesan cheese, finely grated

Steps:

  • 1. Preheat oven to 450°F/230°C.
  • 2. Put beans, mushrooms and onion into a large zip-lock bag (or a large mixing bowl).
  • 3. Whisk together the olive oil, vinegar, salt and pepper. Pour the dressing over the vegetables and shake bag until vegetables are well coated.
  • 4. Arrange vegetables on a large baking sheet, spreading them out so beans and mushrooms aren't too crowded. Roast in oven for 20 to 30 minutes or until beans are tender-crisp and all liquid from the mushrooms has evaporated. Sprinkle chopped basil and grated Parmesan cheese on top, and serve immediately.

Green Beans with Balsamic-Shallot Butter image

1/2 c balsamic vinegar
2 large shallots, finely chopped
4 Tbsp butter, room temperature
2 lb green beans, trimmed
salt and pepper, to taste

Steps:

  • 1. Combine vinegar and shallots in heavy small saucepan.
  • 2. Boil over medium heat until most vinegar is absorbed (about 1 tablespoon liquid should remain in pan), stirring frequently, about 6 minutes.
  • 3. Transfer mixture to small bowl; cool completely.
  • 4. Add butter; mix with fork until blended.
  • 5. Cook beans in large pot of boiling salted water until crisp-tender, about 6 minutes. Drain.
  • 6. Refresh under cold water; drain.
  • 7. Pat dry with paper towels. (Balsamic-shallot butter and beans can be made 1 day ahead. Cover separately; chill.)
  • 8. Combine beans and balsamic-shallot butter in large nonstick skillet.
  • 9. Toss over medium heat until beans are heated through, about 5 minutes.
  • 10. Season to taste with salt and pepper and serve.

Tips:

  • Choose fresh, crisp green beans for the best flavor and texture.
  • Trim the ends of the green beans before cooking to remove any tough or fibrous ends.
  • Blanch the green beans in boiling water for a few minutes to help them retain their color and crispness.
