2 pounds fresh green beans, trimmed and cut into 2-inch pieces
1/2 cup balsamic vinaigrette
1/4 cup sugar
1 garlic clove, minced
3/4 teaspoon salt
2 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (15 ounces each) cannellini beans, rinsed and drained
4 fresh basil leaves, torn

Steps:

  • Fill a Dutch oven three-fourths full with water; bring to a boil. Add green beans; cook, uncovered, 3-6 minutes or until crisp-tender. Drain and immediately drop into ice water. Drain and pat dry., In a large bowl, whisk vinaigrette, sugar, garlic and salt until sugar is dissolved. Add canned beans and green beans; toss to coat. Refrigerate, covered, at least 4 hours. Stir in basil just before serving.

1/2 pound green beans, trimmed, cut in half crosswise
1/2 pound wax beans, trimmed cut in half crosswise
One 15-ounce can kidney beans, rinsed, and drained
1/2 small red onion, minced, soaked in cold water for 5 minutes and drained
1/4 cup sugar
1/3 cup cider vinegar
1/4 cup vegetable oil
1/2 teaspoon kosher salt plus more to taste
Freshly ground black pepper
1 tablespoon minced flat-leaf parsley

Steps:

  • Bring a pot of salted water to a boil. Set up a large bowl of ice water. Add the fresh beans to the boiling water, and cook until crisp-tender, about 4 to 5 minutes. Drain and plunge the beans into the ice water to stop the cooking and set their color. Drain.
  • In a medium bowl, combine the beans and the onion. In a small saucepan, bring the sugar, vinegar, oil, and salt to a simmer. Pour the liquid over the beans. Marinate the beans at room temperature for 1 hour, tossing several times. Just before serving, season with salt and pepper to taste, add the parsley. Serve.

1 tablespoon horseradish mustard
1/4 cup sugar
1 garlic clove, minced
3/4 teaspoon salt
2 {15} ounce cans kidney beans, drained and rinsed
2 {15 ounce} cans cannellini beans, drained and rinsed
1/2 sweet onion, sliced
5-6 fresh basil leaves, shredded
fresh cracked pepper

Steps:

  • Bring a large pot 2/3 full with water and bring to a boil. Add green beans and cook until tender {about 3-4 minutes}. Drain and then place beans in a bowl of ice water to cool. Drain and pat dry.
  • In a large bowl, whisk vinaigrette, horseradish mustard, sugar, garlic and salt until the sugar is dissolved. Add canned beans, green beans and onions to vinaigrette and toss to coat.

This is so easy and delicious. I am known for this dish at potlucks. This salad is very pretty as the three diffent colors sparkle in the dressing. I would describe it as 'sweet & sour.'
