Balsamic vinegar reduction is a versatile condiment that can be used to enhance the flavor of a variety of dishes, including steak. This rich and tangy sauce is made by simmering balsamic vinegar until it thickens and caramelizes. The result is a thick, syrupy sauce with a complex flavor profile that is perfect for drizzling over grilled or roasted steak. The sweetness of the balsamic vinegar pairs perfectly with the savory flavor of the steak, and the acidity helps to cut through the richness of the meat. Balsamic vinegar reduction is also a great way to add a touch of sophistication to a simple weeknight meal.

Sear steak to a perfect medium rare and make a pan port wine and balsamic vinegar reduction sauce to finish!

Provided by iqspam

Categories     One Dish Meal

Time 30m

Yield 4 serving(s)

Number Of Ingredients 5

1 lb New York strip steak (trimmed)
1 tablespoon fat (take from steak trimmings for more flavour)
1/2 cup ruby port
1 tablespoon red shallot, finely chopped
1/4 cup balsamic vinegar

Steps:

  • Heat bits of trimmed fat in heavy pan over medium high heat.
  • Add shallot and sautee.
  • Remove shallot from pan and set aside.
  • Heat pan over high heat until very hot.
  • Sear steak until dark brown on both sides. This should be enough for medium rare, but if not, or a higher temperature is desired, put in oven at 400 degrees until the desired internal temperature is reached.
  • Remove steak from pan.
  • Add half of the port to the pan, and bring to a boil. Let boil for 5 seconds, and then use a spatula to scrape the brown bits from the bottom of the pan.
  • Add sauteed shallot, the rest of the port and the balsamic vinegar to the pan, and reduce sauce to desired consistency.
  • Slice steak and serve with reduction sauce.
  • Note: Recommend cast iron pan for this recipe as it maintains heat even when the steak is added, making for a good quick sear.

Categories     Sauté     Low Carb     Quick & Easy     Vinegar     Rosemary     Steak     Bon Appétit

Yield 2 Servings; Can Be Doubled

Number Of Ingredients 5

2 3/4-inch-thick boneless rib eye steaks or other tender beefsteaks (about 6 ounces each)
3 teaspoons olive oil
1/3 cup chopped shallots
2 teaspoons chopped fresh rosemary
3 tablespoons balsamic vinegar

Steps:

  • Sprinkle steaks with salt and generous amount of pepper. Rub 1 teaspoon oil over bottom of heavy medium skillet. Heat skillet over medium-high heat. Add steaks to skillet and cook to desired doneness, about 4 minutes per side for rare. Using tongs, transfer steaks to plate; tent with foil to keep warm.
  • Add remaining 2 teaspoons oil to same skillet. Reduce heat to medium-low. Add shallots and rosemary and cook for 2 minutes, stirring occasionally, Add vinegar and cook until reduced to glaze, stirring up browned bits, about 1 minute. Mix in juices from plate with steaks. Spoon glaze over steaks and serve.

Tips:

  • Choose a high-quality balsamic vinegar. The better the quality of the vinegar, the better the reduction will be. Look for a vinegar that is aged for at least 12 years and has a rich, complex flavor.
  • Reduce the vinegar slowly and carefully. Rushing the process will result in a burnt or bitter reduction. Simmer the vinegar over low heat until it has thickened and reduced by about half.
  • Use a heavy-bottomed saucepan. This will help to distribute the heat evenly and prevent the vinegar from burning.
  • Add some flavorings to the reduction. Common additions include garlic, shallots, rosemary, and thyme. Get creative and experiment with different flavors to find your favorite combination.
  • Let the reduction cool before using. This will allow the flavors to develop and mellow.

Conclusion:

Balsamic vinegar reduction is a versatile condiment that can be used to add a touch of elegance to any dish. It is especially good with steak, grilled vegetables, and roasted meats. With its rich, complex flavor and beautiful appearance, balsamic vinegar reduction is sure to impress your guests. So next time you are looking for a way to add some extra flavor to your meal, give balsamic vinegar reduction a try. You won't be disappointed.
