BANANA LOAF CAKE I

Banana Loaf Cake I image

This recipe is a family favorite. It is great for using overripe bananas. I usually double the recipe and make two loaves. You can also add walnuts if you wish. Note: When your bananas are overripe, you can put them in the freezer until you are ready to use them.

BANANA BLISS

Provided by Food Network

Time 20m

Number Of Ingredients 16

1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
4 large bananas
1/2 cup pecans, halved or chopped
1/2 cup water
1/2 pound (2 sticks) unsalted butter
1 cup lightly packed dark brown sugar
1 teaspoon vanilla
2 tablespoons banana liqueur
2 tablespoons Irish cream liqueur
1 tablespoon Cognac
1 teaspoon dark sesame oil
Vanilla ice cream
1 1/2 teaspoons cinnamon
1/2 teaspoon ground anise seed

Steps:

  • Combine the seasoning mix ingredients in a small bowl.
  • Peel the bananas and cut them into diagonal slices about 1/2-inch thick. Set aside. In a small nonstick skillet over medium heat, roast the pecans, stirring constantly, until they begin to darken and give off a rich toasted aroma. Remove from the heat and set aside. In a 10-inch skillet whisk together the water, butter, and sugar. When the butter melts, add the seasoning mix and bring to a boil, whisking frequently. Whisk in the remaining ingredients, then add the reserved bananas and pecans. Combine to cook, stirring gently, for 4 minutes. Remove from the heat and serve warm with vanilla ice cream.

Tips:

  • Use ripe bananas: Ripeness not only brings out a stronger flavor but also makes the bananas easier to mash, ensuring a smooth batter.
  • Measure the flour accurately: Too much or too little flour can alter the cake's texture. Use a kitchen scale for precise measurements or spoon the flour into the measuring cup and level it off with a knife.
  • Cream the butter and sugar until fluffy: This helps incorporate air into the mixture, resulting in a lighter, more tender cake.
  • Don't overmix the batter: Overmixing can develop the gluten in the flour, leading to a tough cake. Mix just until the ingredients are well combined.
  • Bake the cake until a toothpick inserted into the center comes out with just a few moist crumbs attached: Overbaking can dry out the cake.
  • Conclusion:

With its moist, fluffy texture, sweet banana flavor, and nutty streusel topping, this Banana Bliss Cake is a delightful treat that's perfect for any occasion. Following these tips will help you achieve a perfectly baked cake that will satisfy your sweet cravings. So gather your ingredients, put on your apron, and let's embark on a blissful baking journey!
