CINNAMON CRUNCH BANANA BREAD

Cinnamon Crunch Banana Bread image

This easy cake - no mixer required - is a popular staple at Bakesale Betty in Oakland, Calif. Pie, cake, cookies and a legendary fried chicken sandwich are the only things on the menu, but locals start lining up long before opening time. They're that good. Betty herself, the baker Alison Barkat, adds a cinnamon-sugar topping and honey to the classic banana bread formula for a deeply caramelized, moist result.

Time 1h30m

Yield 1 (9-by-5-inch) loaf

Number Of Ingredients 14

Unsalted butter, for greasing
1 1/2 cups/190 grams all-purpose flour
1 cup/200 grams granulated sugar
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup/120 milliliters vegetable oil
2 large eggs
1/4 cup/60 milliliters honey
1 cup mashed ripe bananas (from 2 to 3 medium bananas)
1/4 cup/60 milliliters warm water
1/4 cup/55 grams brown sugar, preferably light brown or Demerara sugar
2 tablespoons granulated sugar
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 350 degrees. Butter a 9-by-5-inch loaf pan and line it with parchment or wax paper, leaving enough paper hanging over the sides to lift the cake out after baking. (This will prevent the topping from breaking when removing the bread from the pan.)
  • Prepare the batter: In a medium bowl, combine flour, granulated sugar, cinnamon, baking soda and salt. In a large bowl, using a sturdy whisk, beat together oil, eggs and honey until smooth. Stir in bananas and warm water. Add dry ingredients to egg-oil mixture and stir to blend. Pour batter into prepared pan.
  • Make the topping: In a small bowl, mix brown sugar, granulated sugar and cinnamon, using your fingers to break up any lumps. Sprinkle evenly over batter.
  • Bake until a tester inserted into the center comes out clean, about 1 hour, checking after 50 minutes. If topping shows signs of burning, reduce heat to 325 degrees.
  • Remove to a rack and let cool in pan for 30 minutes. Use the edges of the paper to lift the cake up and out. Place on a rack (leave the paper on) and let cool before slicing and serving.

Banana Bread with Cinnamon-Crumb Topping

The combination of sweet bananas and aromatic cinnamon makes this classic quick bread an absolute favorite among sweet bread enthusiasts. Follow our tips to achieve a flawless and delectable treat every time you bake it.

Moist and Flavorful Banana Bread - Use ripe bananas. The key to moist and flavorful texture lies in using ripe bananas with a vibrant yellow peel speckled with brown. - Mash the bananas well. Ensure the bananas are mashed until they reach a smooth and creamy texture. This will ensure an even distribution throughout the batter. - Don't over-cream the butter and sugar. This mixture should be creaming until light and fluffy, not greasy. Over-creaming can result in a tough and dry texture. - Add yogurt to keep it moist. Adding yogurt to your recipe contributes to the richness and moist texture of the final product. - Don't over-knead or over-work the batter. Over-kneading the batter can result in a tough and chewy texture. Once all the ingredients are combined, mix until just combined. Cinnamon-Crumb Topping - Use fresh cinnamon. Opt for freshly ground cinnamon powder for the best aroma and cinnamon crumb. Pre-ground store-bought cinnamon can result in less vibrant flavors. - Use cold butter. When combined with sugar, cold butter forms small and distinct crumbs, resulting in a "crumble" effect. Using melted butter or softened butter will create a "paste" texture. - Chill the crumble before topping. Chilling the crumble mixture before adding to the batter helps to keep the distinctive crumb texture from melting and instead forms a delicious, crunchy topping. Baking and Serving - Bake until a toothpick comes out with a few moist crumbs attached. Over-baking can result in dryness. - Let it cool completely. This allows the flavors to fully meld together and gives the structure a chance to set properly, allowing it to be sliced neatly. - Serve warm or at room temperature. Banana bread tastes fantastic served warm with an extra dusting of powdered sugar, but it also makes a great grab-and-go breakfast or a satisfying afternoon treat once it has cooled completely. Storing and Presving - Store in an airtight container. After the bread has completely cooled, store it in an airtight container to maintain its freshness and keep it moist. - It can be stored for up to 5 days. Properly stored, the bread will maintain its optimum quality for up to five days, allowing you to enjoy slices throughout the week. Banana bread is a timeless treat enjoyed by many, and we hope these tips help you achieve a delicious and satisfying loaf that will please your taste buds with every delectable mouthful.
