1 cup superfine sugar
½ cup butter, melted
2 eggs, beaten
1 teaspoon baking soda
¼ cup sour cream
1 cup mashed ripe banana
1 ½ cups cake flour
1 teaspoon baking powder
1 teaspoon vanilla extract
1 cup chopped pecans
3 tablespoons brown sugar, or more to taste
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch square baking dish.
  • Beat superfine sugar and butter in a bowl with an electric mixer until smooth. Add eggs one at a time, beating until each egg is fully incorporated before adding the next. Mix baking soda into sour cream in another bowl and stir into butter mixture until combined.

1 1/4 cups sugar
2 eggs
1 cup mashed ripe banana (about 3 medium)
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup chopped pecans
2 tablespoons sugar
1 teaspoon ground cinnamon

Steps:

  • In a large mixing bowl, beat cream cheese, butter and sugar.

1 cup sifted cake flour, (not self-rising), plus more for pan
1/2 teaspoon baking soda
1/4 teaspoon baking powder
Pinch of ground cloves
1 very ripe large banana, mashed (about 1/2 cup)
1/4 cup buttermilk
1/2 teaspoon pure vanilla extract
1/2 cup firmly packed dark-brown sugar
1 large egg
1/4 teaspoon salt
1/4 teaspoon ground cinammon
1/3 cup chopped toasted pecans
Confectioners' sugar, for dusting
Sweetened whipped cream, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Butter a 6-by-2-inch round cake pan. Line bottom with parchment paper; butter, and dust with flour. Set aside. Into a bowl, sift flour, baking soda, baking powder, salt, cinnamon, and cloves. In another bowl, whisk banana, buttermilk, and vanilla.

175g golden caster sugar
3 eggs
140g self-raising flour
85g ground almonds
½ tsp baking powder
100ml milk
2 small, very ripe bananas
50g pecan , chopped, plus extra
85g softened butter
100g icing sugar , sifted
1 tsp vanilla extract

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb/900g loaf tin with a long strip of baking parchment.
