1 cup mashed ripe bananas
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup chopped walnuts
FILLING:
1/4 cup butter, cubed
1/2 cup packed brown sugar
1/4 cup all-purpose flour
Pinch salt
3/4 cup milk
1 egg yolk
1 teaspoon vanilla extract
1/2 cup chopped walnuts
Confectioners' sugar

Steps:

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and egg white. Add the buttermilk, bananas and vanilla. Combine flour, baking soda and salt; stir into the creamed mixture. Stir in walnuts., Pour into two greased and floured 9-in. round baking pans.
