HEALTHIER BANANA SPLIT MUFFINS
These muffins was on 'The Kids Page' of the newspaper in 1996 and have become one of my favorite snacks. They are low fat since they are made with applesauce instead of butter or oil.

In Aliquippa, Pennsylvania, Elaine Anderson and daughter Elizabeth pack all the goodies that kids love in a banana split into moist muffins. "Elizabeth likes to help measure and mix everything together. Her favorite part is adding the cherries at the end," Elaine notes.

BANANA SPLIT MUFFINS
Yum Banana Split in a muffin. I made adjustment to this recipe. The original recipe says to put the chocolate chip and pecans on top of the muffins before you bake them. I just felt it needed to be in the muffin. Then it states to add a cherry immediately after you remove it from the oven. I just couldn't see the cherry staying on top if I did that. So I've put it all inside the muffin. My only concern is that it may be to much chocolate so you may want to cut the chocolate chips down to 1/2 cup unless you are a serious chocolate lover. You can also leave out the pecans, if you like. But I hope you all enjoy!!

TRAIL MIX BANANA BREAD MUFFINS
Instead of folding chopped nuts into your banana bread, try trail mix. In this mashup recipe, we combine two of our school-year favorites into one irresistible treat. Plain trail mix works well here, but we love those that include dried banana chips, rainbow chocolate candies or soft coconut flakes.

Tips:
- Selecting ripe bananas: Choose bananas with yellow skin and brown spots, as they are sweeter and have a richer flavor.
- Measuring flour accurately: Use a kitchen scale to measure flour for the most precise results. Alternatively, spoon the flour into a measuring cup and level it off with a knife.
- Mixing the batter: Avoid overmixing the batter, as this can result in tough muffins. Mix just until the ingredients are combined.
- Filling the muffin cups: Fill the muffin cups about 2/3 full to allow for rising during baking.
- Baking the muffins: Bake the muffins until a toothpick inserted into the center comes out clean. Overbaking can dry out the muffins.
- Cooling the muffins: Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. This will help prevent them from breaking.
Conclusion:
These banana split muffins are a delicious and easy-to-make treat that are perfect for breakfast, brunch, or dessert. With their moist crumb, sweet banana flavor, and colorful sprinkles, they are sure to be a hit with everyone. So next time you have some ripe bananas on hand, give this recipe a try.
