¼ cup granulated sugar
1 tablespoon vanilla extract
4 tablespoons vegetable oil, plus more for frying
1 large egg
1 ½ cups flour
1 teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon salt
powdered sugar, for sprinkling
chocolate, melted, for dipping
caramel sauce, for dipping
popsicle stick

Steps:

  • Peel the bananas and slice off the tops and bottoms to create a straighter middle section. Save ends for later.
  • Insert a popsicle stick into the middle of each banana and place on a parchment paper-lined baking sheet.
  • Freeze the bananas until solid, about 1 hour.
  • In a medium bowl, mash the banana ends with a fork until smooth.
  • Add the sugar, vanilla, oil, and egg. Mix until combined.

1 cup chocolate, melted
whipped cream
maraschino cherry, or toppings of your choice

Steps:

  • Slice a banana into thirds, and then cut each segment in half lengthwise.
  • On a parchment paper-lined sheet tray, place a tablespoon of chopped nuts in a small circle shape.
  • Pour a tablespoon of melted chocolate over the top of the nuts. Lay a popsicle stick on the chocolate, and top the stick with additional melted chocolate.
  • Add two halves of sliced banana facing upwards in the melted chocolate. Repeat with all the other banana splits on a stick.
  • Freeze for at least 2 hours.

3 small bananas
1/3 cup walnuts, finely chopped
1/3 cup heavy cream
2 teaspoons pineapple preserves
12 maraschino cherries, halved
Multicolored tiny nonpareil sprinkles, for decorating

Steps:

  • Line a baking sheet with parchment. Put the chocolate in a small microwave-safe bowl, and microwave in 30-second increments, stirring after each, until smooth. Transfer the melted chocolate to a mug.
  • Put the walnuts in another small bowl. Peel the bananas, trim the ends and cut each into six 2-inch pieces. Dip each piece halfway into the chocolate, and let any excess drip off. Roll the chocolate-dipped ends in walnuts, then set them on the prepared baking sheet. Refrigerate to set the chocolate. (The bananas can be refrigerated up to 2 hours.)
  • Whip the cream in a small bowl until soft peaks form. Add the preserves, and stir to incorporate. Transfer the mixture to a pastry bag fitted with a large star tip. Pipe a star-shaped dollop on top of each banana. Garnish with a piece of cherry and sprinkles.
