1 ½ pounds baby potatoes (thinly sliced)
2 teaspoons olive oil
1 tablespoon seasoning salt
¼ teaspoon pepper
4 boneless chicken breasts (skinless)
¼ cup bacon bits
⅔ cup cheddar cheese (shredded)
1 cup barbecue sauce (divided)
green onions or chives
4 tablespoons sour cream (optional)

Steps:

  • Preheat grill to medium high heat.
  • Prepare foil packets. Lay out 4 large pieces of heavy duty foil then top each with a large piece of parchment paper (or spray with non stick spray).
  • Place equal amounts of sliced potatoes and onions in the middle of each packet. Drizzle with oil and sprinkle with seasoning salt and pepper.
  • Place a chicken breast on top of potatoes. Brush each side of each chicken breast with barbecue sauce.

4 chicken breast halves (1 to 1 1/4 lbs.)
1 cup barbecue sauce
1 (10 ounce) package frozen whole kernel corn or 1 (15 1/4 ounce) can whole kernel corn, drained
1/2 cup green bell pepper, chopped

Steps:

  • Preheat oven to 450*.

pam original nonstick cooking spray
1/2 cup hunt's original barbecue sauce
2 cups thinly sliced small red potatoes (4 to 6 potatoes)
4 boneless skinless chicken breasts (5 ounces each)
1 cup chopped green bell pepper
1/4 cup chopped onion
1/4 teaspoon ground black pepper
1/2 cup shredded reduced fat Cheddar cheese

Steps:

  • Preheat outdoor grill to medium-high heat according to manufacturer's directions. Place four 18x2-inch pieces of heavy foil on counter. Spray each with cooking spray. For each packet, spread a generous teaspoon barbecue sauce in center. Place 1/2 cup potatoes in single layer over sauce. Spoon another teaspoon sauce over potatoes.

1 whole chicken (about 1.2kg)
160g natural yogurt
2 tsp ground cumin
1 tsp smoked paprika
1 tsp ground coriander
1 tsp ground fenugreek
2 tsp ground turmeric
1 tbsp tomato purée
3 garlic cloves, crushed
3 lemons, 1 zested and juiced, 2 cut into wedges
2 tsp honey
2 tsp cider vinegar

Steps:

  • Lay the chicken breast-side down on a board and use scissors to cut down either side of the backbone to remove it (you can use this to make stock). Flip the chicken over and press down firmly on the breastbone using your palms to flatten it.
  • Mix the yogurt with the spices, tomato purée, garlic, lemon zest and juice, the honey, vinegar, 2 tsp salt and 1 tsp black pepper. Rub this all over the chicken, pushing it into any gaps and under the skin. Put the chicken in an airtight container and chill for 1-2 hrs or up to 24 hrs.

It's ready when a thermometer inserted into the thickest part of the meat reaches 70C, or the juices from the thigh run clear. Remove the chicken from the barbecue, loosely cover with baking parchment and rest for 15 mins. Carve and serve with lemon wedges.
