PERFECT BARBECUED LAMB CHOPS

If you're not sure you like Lamb, try barbecuing it as it takes on a whole different flavor. My favorite marinade is very simple, and it is similar in taste to those petite lamb chops you get at the fancy Greek restaurants. Try this - you'll love it!

Categories     dinner, weekday, main course

Time 45m

Yield Four servings

Number Of Ingredients 16

5 cloves garlic, peeled and sliced
2 sprigs fresh rosemary
2 sprigs fresh thyme
1 tablespoon dried oregano
20 black peppercorns, cracked
1/2 cup olive oil
12 rib lamb chops, trimmed of fat
1 tablespoon canola oil
1 small red onion, peeled and diced
1/2 carrot, peeled and diced
2 cloves garlic, peeled and crushed
1/2 Serrano chili, seeded
1/4 cup red-wine vinegar
1/2 cup ketchup
1 1/2 tablespoons Dijon mustard
1 tablespoon honey

Steps:

  • Combine the garlic, herbs, peppercorns and olive oil. Pour over the lamb and refrigerate overnight.
  • To make the sauce, heat the canola oil in a medium-size saucepan over medium-high heat. Add the onion, carrot and garlic and saute until softened, about 3 minutes. Add the chili and vinegar and stir 1 minute. Add the ketchup, mustard and honey. Turn the heat to low and simmer 25 minutes. Let cool slightly and puree in a blender. Strain. Thin with a little water, if needed.
  • Start a charcoal grill. Wipe the marinade off the lamb and grill the meat until medium rare. About a minute before the lamb is done, brush the lamb on both sides with the sauce. Serve with additional sauce.

Tips:

  • Choose high-quality lamb chops: Look for chops that are bright red in color and have a good amount of marbling. Avoid chops that are brown or have a lot of sinew.
  • Marinate the lamb chops: Marinating helps to tenderize the chops and add flavor. You can use a variety of marinades, such as a simple olive oil and herb marinade, or a more complex marinade with ingredients like yogurt, garlic, and spices.
  • Cook the lamb chops over high heat: This will help to sear the chops and lock in the juices. You can cook the chops on a grill, in a skillet, or under a broiler.
  • Don't overcook the lamb chops: Lamb chops are best cooked to medium-rare or medium. Overcooked lamb chops will be tough and dry.
  • Let the lamb chops rest before serving: This will allow the juices to redistribute throughout the chops, making them more tender and flavorful.

Conclusion:

Barbecued lamb chops are a delicious and easy-to-make dish that can be enjoyed by people of all ages. With a few simple tips, you can make sure that your lamb chops turn out perfect every time. So fire up the grill and give this recipe a try!
