1 package (16 ounces) reduced-fat fully cooked smoked Polish sausage, cut into 3/4 slices
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1/2 cup packed brown sugar
1/4 cup cider vinegar
1-1/2 teaspoons ground mustard
1 teaspoon chili powder
1/2 teaspoon ground ginger
1/4 teaspoon salt

2 packages (10 ounces each) frozen baby lima beans
Hot cooked rice

Steps:

  • In a large nonstick skillet, saute the onion, green pepper and garlic in oil for 1 minute. Add sausage; cook and stir 4-5 minutes longer or until sausage is lightly browned. 1 (16 ounce) package dried lima beans, soaked overnight
2 smoked ham hocks
8 cups water
5 cups shredded cabbage
½ cup butter
1 ½ teaspoons salt
¾ teaspoon ground black pepper
¾ teaspoon garlic powder
1 (28 ounce) can diced tomatoes
1 pound smoked sausage, sliced

Steps:

1 pound dried lima beans
6 cups water
1-1/2 cups chopped onions
1 teaspoon salt
1 cup ketchup
3/4 cup packed brown sugar
1/3 cup pancake syrup
1/4 teaspoon hot pepper sauce
4 bacon strips, cooked and crumbled

  • Place beans in a large saucepan; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans, discarding water. 3 tablespoons molasses
3 tablespoons honey mustard

1 pound dry navy beans, rinsed and picked over
2 cloves
1 small onion, halved
1 1/2 pounds chicken-apple sausages, each halved lengthwise
2 tablespoons cider vinegar

Pickled peppers, sliced scallions and/or sour cream, for garnish (optional)

I love lima beans, so here's one we've adapted and hope to make. Time does not include overnight bean soaking.

1 1/2 cups dried lima beans
1 teaspoon salt
1 lb pork sausage, browned well until crisp
1/4 cup molasses
1/2 cup condensed cream of tomato soup
1/2 cup tomato ketchup
1 teaspoon dry mustard
fresh ground black pepper, to taste
1/8 teaspoon granulated garlic or 1/8 teaspoon garlic powder
1/4 cup hot water

Steps:

  • Soak the beans in lots of water overnight, then drain, rinse, and pick out any bad ones.
  • In a large pot, cover with cold water and add salt. Simmer covered over medium heat for 35 to 45 min until tender (make sure they don't get mushy). The amount of time it takes will depend on how large the beans are.
  • Preheat oven to 350 degrees F.
  • Drain and pour the cooked beans into a well-oiled baking dish.
  • In a bowl, combine the remaining ingredients and stir to combine well. Add to the beans and fold it all together.
  • Bake in a 350 degree F oven for 1 hour.

4 - 5 inch (10-12 ounce) smoked sausages
1 medium onion
2 - 10 oz frozen fordhook lima beans
1 - 14 1/2 oz can of stewed tomatoes
1/4 cup(s) firmly packed brown sugar
1 teaspoon(s) dry mustard
1 teaspoon(s) chili powder
1/2 teaspoon(s) ground ginger
1/4 teaspoon(s) salt

Steps:

  • 1. In a heavy 9 inch skillet heat oil over medium heat. With fork pierce sausages all over several times. Add sausages and stirring onion occassionally , until lightly browned- about 4 minutes.
  • Add lima beans, tomatoes, brown sugar, vinegar, mustard, chili powder, ginger, and salt; cover and heat to boiling. Reduce heat to low and cook stirring occassionally, until limas are tender- 10-12 minutes.
  • To serve with tongs, lift sausages and arrange on top of beans. Serve from skillet.
